Apple Dumplings I

A very easy dessert to make. We found the sauce a little too sweet for our tastes, but I will try again and either cut the sugar or perhaps leave the sauce out entirely. They sure smell good when in the oven, my husband was hanging around in the kitchen just waiting to try them!

Modenese Pork Chops

This gets a five for both simplicity and flavor. We happen to love rosemary, but this recipe would adapt well if you used dill, thyme or any herb of your choice. Thank you for a lovely way to prepare pork chops.

Lemon Wow Cake

A great cake! I used a lemon cake mix and made a lemon glaze. My husband especially loved it and has requested it for his birthday cake. I can hardly wait to serve it again, I think it would be fantastic with either fresh sliced strawberries or a blueberry sauce and whipped cream. A definite keeper!

Chocolate Covered Strawberries

These are so simple and never fail to impress! I have made these many times, most recently to decorate my daughters birthday cake. They also make a wonderful addition to any dessert tray.

Smoked Salmon Mousse

My husband whipped this up to take to a Super Bowl Party and he said it got rave reviews and none of the "guys" believed he made it. I didn't get to taste it, but it certainly got a high approval rating from the "guys" as there were no leftovers for my hubby to bring home. He said to thank you for making him such a star!

Libby's® Pumpkin Cranberry Bread

I barely got a piece to taste as my husband practically devored this! Very moist and had good flavor. I used crasins and they worked well. I didn't have pumpkin pie spice, so I used a combination of cinnamon, cloves, ginger and allspice ( I didn't use nutmeg as I didn't have any). I definately will be making this again and often, if my husband has his way!

Chicken Francese

We liked the flavor (added some garlic), it was very easy and quick to assemble, but I wouldn't serve this for everyday as it was so rich and fattening. It is quite a mild dish, so I think the reviewer who served it with a Greek Salad has the right idea. You need rice to sop up the creamy sauce, and a spicy sidedish to give it some kick!

Pork Chops with Herbed Gravy

We thought this was a very good way to serve pork chops. The only thing I added was about a quarter cup of white wine to the gravy and some chopped parsley along with the fresh tomato. Thanks.

Fish Fillets Italiano

A simple and very nice way to prepare white fish. I used Red Snapper which worked well. I also used Kalamata Olives which we love and added some fresh mushrooms and Italian Seasoning. Thanks for the great recipe.

Pasta Bake

An excellent family dinner. Like many others I used fresh mushrooms and chopped garlic as well as Italian seasonings to spice it up a bit. Had my grandchildren over for dinner and they loved it as well. Thanks for a great recipe.

Spinach and Strawberry Salad

This was a lovely looking salad. I did change it quite a bit though. I added toasted slivered almonds and thinly sliced red onions. And I used a balsamic vinagrette for the dressing, as I didn't want it to be too sweet. The final result was delicious.

Chicken and Bacon Shish Kabobs

This is a difficult recipe for me to review. I thought the flavor was good, but next time I would add garlic to the marinade as I felt it needed a little kick. I did partially cook the bacon in the microwave, but we still had problems with grease fires! The pineapple chunks were a problem as they kept falling off so I would probably elimiate them next time. I think the addition of red or yellow peppers would be good. I still give this recipe a 4 star rating as we did enjoy the meal once it was cooked, and I would make it again with the changes I have mentioned.

Teriyaki Chicken Salad

Very nice dinner salad. I didn't use the lemon-lime soda, instead I used some liquid margarita mix and a squeeze of lemon - turned out fine. We enjoyed the salad with crusty rolls and a glass of white wine.

Beef Fillets With Stilton-Portobello Sauce

Wow, this turned out excellent and I didn't even use tenderloin. I had some very thick sirloin steaks so I browned them as directed and then finished them in a 375 degree oven for 20 mins. I was afraid they wouldn't be tender, but they turned out great. I followed all the directions exactly, except I added a splash of Beef Bovril - just for the color, so my sauce was a rich brown shade.

Basil Chicken and Pasta

I loved this dish! The sauce was creamy with rich flavorings. After reading some of the comments I used fresh basil, added Italian seasonings, and garnished with more fresh basil and chopped tomato. I will make this again, but not too often, as it is so fattening. I plan on using a lighter cream next time.
