Pumpkin, Kale, and Black Bean Stew

Hearty, delicious fall soup. I subbed in butternut squash and red wine vinegar and omitted sorrel (since I've never even heard of it). I also added couple cups of water near the end thinking it needed more broth. I will make again and try some of the other alternatives suggested here.

Refried Beans Without the Refry

A bit too salty for my taste. Still, looks and tastes pretty good. I would cut back on salt in the future.

Kielbasa and Cabbage

Made pretty much as written and it was very good. I liked cooked cabbage much more than I expected. However, while not the fault of the recipe writer, I found I didn't love kielbasa that much. It's very different from the sausages I am used to and much fattier/softer. My husband describes it as more like a fancy hot dog flavor. If you like kielbasa though, I think this is a winning recipe. My one alteration was that like others, I added in some redskin potatoes. It made the meal complete.

Depression Era Corn Chowder

This was a little thin but tasty. I cut up and fried some bacon in the pot first, then I added the onion and some celery. After the house started smelling yummy, I started the soup recipe mostly as written. I like to top our corn chowder with some paprika when serving.

Lentil Cakes (Patties)

So I made these because we're moving soon and I'm trying to get rid of stuff in my pantry. I had about a cup of lentils that's been in there for who knows how long. Anyway, because my goal was to decumulate, I was not going to go out and buy more ingredients. So here are my substitutions and let me say, this was quite delicious! Oatmeal instead of cereal, pecans instead of walnuts, ranch mix instead of onion soup mix/poultry seasoning. Yes, those are some major changes but the recipe author wrote that she also has played around with the ingredients too so I think she'd approve!

Italian Sausage Soup

This is my first review but I had to say that this was simply delicious! It would be delicious as it is written but I did add some onion and celery at the beginning and some macaroni and red wine later. I also omitted the salt and subbed in some oregano and parsley. Finally, serve with some grated romano. Yum! I will make this again and again. Thanks!
