Chef John's Salt Roasted Chicken

I do my Thanksgiving turkey this way and it always comes out tender and juicy. The real secret to this method is to rinse the kosher salt off under running water before adding additional seasoning and baking. Fall off the bone juicy and tender.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

The one thing my Grandmother taught me about thicker liquid in beans was to a small peeled potato into the beans. I guess the potato acts just like corn starch, because the potato is starchy and thickens up the juice in the beans. The jalepeneos, in my opinion, should be added in individual servings. London Broil II

Made this yesterday and was was pleasantly surprised at how tender and juicy this turned out. I only had an almost two pound london broil but used the marinade for a four pound and marinaded for about ten hours. I grilled for nine minutes per side and it was amazing but will use more garlic next time. Thanks for a great recipe! Almost forgot. I also added three tablespoons of lemon juice and three tablespoon of worcestershire sauce.

Slow Cooker Garlic Mashed Potatoes

Chef John's Creme Fraiche

Thank you Chef John for this recipe. Started this on Saturday morning and had your beef stroganoff Sunday evening. All I could find was ultra pasterized cream but, it worked just fine. I live in Southeast Texas where it is a little warmer so the Creme Fraiche set up in a little less than 24 hours. Delish!

Old-Fashioned Beef Stew

Everyone makes their stew differently. My Grandmother used meaty beef soup bones with the fat still on them. There was something about the fat that just made the stew so good. She also used green beans, corn and russet potatoes, salt and pepper. Guess she learned it from her mother who was from Poland. Thanks for the recipe.

Roast Sticky Chicken-Rotisserie Style

Made this recipe with two chickens. I took the advice of one reviever and added less salt but, I really should have added the full three tsps. or more because the meat just really wasn't seasoned enough. Next time I'll add a little extra of each seasoning. Really easy. Thanks for the recipe.

Smoky Grilled Pork Chops

Made these for Sunday supper and they were sooo good and tender. I let them set in the liquid smoke and Worcestershire sauce for a couple of hours and rubbed with the seasonings. Excellent!!! Thank you for a great recipe!

I have fried tortilla chips and have found that if you fry them for too long, you will get really chewy chips. Two minutes seems a bit long. Try a minute and half.

Garlic Butter

Chicken Tortilla Soup

I had chicken tortilla soup years ago at a party and it was the best soup ever. I've tried making it myself from other recipes but, never could find one that tasted as good until now. Wow!! This was wonderful. After picking everything up from the store, I ran home to make this recipe. It smelled wonderful and the taste was out of this world. Thank you lady!!

Tried this recipe tonight. The flavor was just hot, that's all. It needs a flavor of Mexico, such as tortilla chips, cumin or chili powder. Might try again but, add some extra flavoring.
