I got a little creative with this recipe. To start off, I used boneless, skinless chicken breast. I put the potatoes, a quartered onion, and 5 whole garlic cloves, around and on top of the chicken in the pan. I seasoned everything with Italian seasoning, salt, black and red pepper, and drizzled with the dressing. I sprinkled some dried cranberries (to add a sweet element) and chopped almonds, crushed up Triscuit crackers (for added crunch), and grated mozzarella (didn't have Parmesan). I baked it 40 min covered, 15 min uncovered. It came out so delicious. The top layer of potatoes/cheese/and toppers was perfectly crispy while the chicken remained moist.
