Chewy Coconut Cookies
Cookies tasted really good, but did turn out a little flat. I ended up choosing to refrigerate the dough and form it into small balls to bake, as I was making these for holiday treat trays and wanted them looking really nice. I froze them and hope they won't become inedible due to their time in the freezer! I am concerned because they are a little on the crunchy side, so I don't know if they will become even more crunchy after being stored in the freezer
