Slow Cooker Oatmeal

I'll have to try again. I used my mini crock pot as suggested and added raisins - again as suggested by another reviewer. What a mess! Turned purple and tasted like raisin mush. I must have not had the proportions of liquid to oatmeal correct either. The sugar cooked out of the raisins and formed a crust, a purple crust, on top. Was rather bizarre. I will try again though because I do enjoy a hot bowl of oatmeal on a cold morning but don't want to wait for it to cook.

Cranberry Sauce

Everyone really enjoyed this and all agreed it is much much better than the canned stuff. Like other reviewers I only used 3/4 cup of o.j. then cooked mine a bit longer and then strained it because I know some of my picky eaters don't like whole berry sauce. I'm glad I made the day before because it seemed to get better every day - it was extremly tart when first made but the tartness mellowed overnight.

Stuffed Mexican Peppers

We will make this again! With this recipe I was able, for the first time ever, to make stuffed peppers that were not watery! Loads of flavor! Way too much salt though for our taste. I sauted a small diced carrot and a quarter of an onion diced and added to the beef. I also used sharp cheddar cheese because that is what I had and it was wonderful. This one is a keeper!

Oven Brown Rice

As far as I am concerned - this is the only way to cook brown rice. It comes out perfect every single time and is delicious. As for the ratio of water/broth to rice - use what is listed on the bag then add a smidge more.

Honey Mustard Grilled Chicken

Oven Fried Parmesan Chicken

I used boneless skinless breasts and every time they come out moist and fork tender. The breading doesn't crisp unless I turn the broiler on the last few minutes.

Mexican Casserole

Served over yellow rice instead of tortillas and omited the cheese - trying to make it heart healthy. Added fresh garlic, half a sliced onion and half a sliced bell pepper, doubled the amount of salsa. It was tasty but more bland than expected. Will try again and kick up the seasoning.

Stuffed Green Peppers

I added corn and a can of chunky rotel tomatos and used extra sharp cheddar cheese instead of swiss. Also added garlic, of course, and a dash of hot sauce.

Mushroom Salisbury Steak

Ignored the recipe except for the gravy. I pan fried the patties which I seasoned with s&p, garlic, and worchestershire. I also added more seasoning to the gravy and used fresh mushrooms and onions.

Italian Breaded Pork Chops

We had bought a bunch of real thick chops on sale and they always came out a bit dry. This recipe was delicious and the chops were moist and tender. This recipe is a keeper! I dreged the chops in the bread crumb mixture before dipping in the eggs then let them rest for five minutes before frying which makes the crust stick better. I also used just the egg white and water instead of milk.

Delicious and Easy Mock Risotto

A new family favorite. I left the kitchen to log on and tell everyone that this dish is as simple and easy as it claims AND it is simply delicious. I always try the original instructions first before changing it around - next time I will try adding mushrooms as suggested. Parmasan cheese made this delicious dish pure bliss. I was sad to put the leftovers up - not that there were a lot to put away. My sweetman stopped me before I could put them up for thirds. :-) Thank you Cynthia Clark!
