Light, Crisp Waffles

Reviewed: Nov. 7, 2006
Really light and fluffy, even when I used whole wheat flour. I was looking for something fast and easy. These were not that quick, but definitely the recipe I will use from now on.

Pork Chops with Raspberry Sauce

Reviewed: Sep. 12, 2006
I have made this several times and it's always a hit. I have used pork tenderloin with the raspberry sauce, and I actually prefer it to the pork chops. I always double the sauce. I still haven't added any sage to my spice cabinet, so I always use crushed rosemary instead. This recipe is so easy that I am adding it to a list of easy recipes for my newlywed sister.

Old Fashioned Onion Rings

Reviewed: Apr. 7, 2006
I served these to a couple of young men who were visiting our home. They couldn't keep their hands off of them! Long after one of them was finished with his meal, he kept munching these onion rings. I served it with some Vidalia brand Blossom Sauce for dipping. I got it at my local Walmart Supercenter. Awesome!

Orange Honey Garlic Chicken

Reviewed: Mar. 29, 2006
This made a good dinner. I used 3 breast halves, but there was enough marinade for at least 4. I baked it for 45 minutes and it came out tender. I simmered the marinade from the baking pan on the stove with 1 rounded tsp. of cornstarch to make a nice sauce. Served it over rice. I did make one change to the ingredients - used 1/4 cup OJ concentrate instead of regular OJ. My kids ate it up.

Strawberry Balsamic Chicken

Reviewed: Nov. 15, 2005
Tastes good - looks ugly. I only used 2 of the 8 oz. containers of yogurt because it seemed that 4 would make an awful lot of marinade. The look of the yogurt combined with the dark brown vinegar made a very unappetizing color of sauce. I would never serve this to guests because of its appearance, but I have to say it tasted very good.

Slow Cook Thai Chicken

Reviewed: Nov. 15, 2005
This tastes really good! I made several changes though. I only used 3 chicken breast pieces instead of 6, but didn't cut the other ingredients in half. I like a lot of sauce. I added a large carrot, sliced diagonally and increased the chicken broth to one cup. I don't like a lot of cumin - it's very over powering - so I decreased it to 1/2 tsp. and added 1/2 tsp. ground ginger. I served it over boiled thai rice noodles and it was a hit with my husband who has a bit of a gourmet palate. My 4 year old ate it. I didn't ask her if she liked it, but it wasn't too spicy for her. It made a pretty dish with the addition of whole peanuts, green onion and cilantro (a must). If you can get them, bean sprouts would make a nice addition after the cooking is done.

Spinach and Spaghetti Squash Quiche

Reviewed: Sep. 23, 2005
This tasted like nothing. That's what my husband said anyway. It's very nutritious, but it was really bland. I even added quite a bit of salt.

Honey Lime Chicken Wings

Reviewed: Jan. 28, 2004
These were excellent! I love lime, so I will be making these again often. One trick to try for those who like crispier chicken wings is to let the wings sit in the flour (in the refrigerator, or course) for at least 30 minutes, longer if you have the time. It helps the flour to stick and makes the wings crispier. This is the secret to making them just like restaurant wings!

Beer Batter

Reviewed: Jul. 23, 2003
I dipped some pre-cooked shrimp into the batter and fried them up. It was excellent! My husband said it was as good as any finer restaurant would serve. With some good sweet and sour sauce, it makes a great main dish with rice or chow mein

Sausage and Rice Stuffed Peppers

Reviewed: May 30, 2002
Really yummy! I've never had stuffed peppers before, so this was a good one to try. I grilled my peppers instead of steaming them. SO GOOD!

Ham Salad Pitas

Reviewed: Mar. 16, 2002
I didn't like the flavor of the sour cream with the other ingredients. This recipe would have been great with mayonaise or miracle whip.

French Onion Soup I

Reviewed: Mar. 16, 2002
This was delicious. I used it as the first course of a valentines dinner for my husband. I didn't use the bread, just the cheese. I only used 2 onions, 3 seemed like too much. I didn't have red wine on hand, so I used grape juice (only 1/4 cup) and a tablespoon of balsamic vinegar. Wonderful flavor, but the flavor changed quite a bit by the next day.
