Lentil Soup

Might as well add my glowing review to the pile! Like others, I have made some tweaks to suit our taste. We use green lentils and soak them for 10 minutes or so in boiling water before adding them to the veggies. I use all low-sodium broth, either chicken or veggie depending on what I have on hand. I skip the canned tomatoes and just use a tbsp of tomato paste, it's a texture thing for me. I use just enough oil to cook the veggies, not 1/4 cup. Finally, we use balsamic vinegar at the end and serve with parmesan bread. Thanks for a fantastic recipe that's very versatile!

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

This recipe is fantastic! The only change I made was omit the mesquite seasoning as I didn't have any around. A tip: Place the grated onion in a sieve and set over a bowl for 30min-1 hour to drain out the extra moisture and keep the burgers from falling apart. The sauce is known as "crack sauce" at our house, it's so addictive. We don't do the carmelized onions every time, just when the Walla Walla Sweets are in season, the burgers are excellent with and without. Thanks for the recipe!

Vegan Black Bean Soup

Used chicken broth since that what I had and didn't want to make a trip to the store with three kids (and not vegan). Served with sliced avocado and nonfat greek yogurt. It was delicious, big hit with the family. This will go into the regular rotation, thanks for the great recipe!

Butternut Squash Soup

Another amazing review for this amazing soup! I can't believe how fast, easy and forgiving this recipe was. I just roasted the left over squash from thanksgiving in the oven for 40 minutes, dumped it on top of sauteed onion and garlic, used oregano since I didn't have majoram handy, used a combo of 1% milk and chicken broth and let it simmer for about 20 minutes. Added 2 oz of reduced fat cream cheese, pureed in the blender and voila! My four year old wants to have this "every single dinner"...success!

Cranberry Sauce

After using this recipe for at least three Thanksgiving dinners, the least I can do it give it the credit it deserves. This is the easiest, most delicious part of the menu. My daughter and I make this together and she loves the hiss and pop of the cranberries. I do add a dash of cinnamon and nutmeg and a tiny bit of powdered clove, AMAZING!!

Cheesy Italian Pull Apart Bread

I was so hopeful about this one but unfortunately, it didn't work out for me. It was very bland and the biscuits didn't cook well. I'm wondering if I didn't pack the baking dish too tight.

Slow Cooker Chicken Taco Soup

Oh man was this delicious! I used fresh corn, jalapenos and tomatoes. I used two chicken breasts, a can of Bud Light, Chicken Stock and cooked it for 5.5 hours on high. I skipped the crushed tomatoes because I didn't have them, didn't need them either. Even the kiddos loved this. This is definitely a keeper!!!

Rich and Simple French Onion Soup

What a fantastic recipe! I used 2.5 sweet onions because that's what was on hand. I did caramelize the onions and deglazed the pan with about 1/4 cup red wine. I used a half teaspoon of thyme after reading the other reviews. Everyone in my family including the 7 and 4 year old kiddos really enjoyed this soup, this is a keeper!
