Golden Sweet Cornbread
I made this cornbread yesterday to have with chicken and white bean chili. We LOVED it. I did make some modifications due to our dietary needs. I have been searching for months for a recipe that would hold up to substituting whole wheat flour for white, since that is all we use, and we have found a winner. :) I took a reviewer's advice and soaked the cornmeal in the milk for half an hour before mixing the ingredients. I used organic sugar and cut the amount to 1/4 cup. I also used 1/2 cup butter to avoid the dryness some reviewers complained of. The result was a moist, slightly sweet and delicious cornbread. Broiled Tilapia Parmesan
This is our new favorite way to prepare Tilapia - I followed the recipe to the letter (unusual for me!) and we LOVE it. I did use fresh grated paremesan, not the detested green can, and our mayonnaise is made from olive oil. I served this with another Allrecipe, Simmered Italian Rice. They were delicious together. :)

Kielbasa with Honey Mustard
We love kielbasa cooked this way! I also add vegetables: sliced onion and brussel sprouts. Sauteed in the liquid after the kielbasa, the sauce nicely balances the bitterness of the brussel sprouts and the onions are delicious. After broiling the kielbasa and brown sugar, I toss it back in with the vegetables and reduced sauce and serve it over rice. Heavenly! A new comfort food at our house. :)
