Addictive Sweet Potato Burritos

I pretty much made these to the letter of the recipe. I did add the full amt of water and felt it was too much. I simmered for a while to reduce, then got impatient and added some of the mashed sweet potato to thicken it back up. The first time we ate these I thought they were pretty good, but lacking something. After eating the leftovers a few days later, I changed my opinion. These are yummy. Next time I'll add some pureed chilies in adobo to up he spice and smokeyness. That's just personal preference though.

Creamy Dill Dip

We've used a version of this for years and LOVE it. We use chopped green onions in place of the dried and serve it in a pumpernickel bread bowl. The pumpernickel is also really good with the dip.

Hot Water Pie Crust I

This turned out flakey and light. It was the most successful pie I've made (my pie crust is usually pretty bad) I did find that it was pretty hard to work with, but my kitchen was very hot. Chilling for an hour before handling and rolling between wax paper helped.

Salsa Chicken Burrito Filling

This was good. I served it with seasoned refried beans, onions, shredded cheese, and sour cream wrapped in a flour tortilla which I then warmed in the oven. My husband asked for the leftovers for lunch the next day.

All Day Apple Butter

I've never made apple butter before and was wanting to try something new. This was a success. Yummy stuff. I made this with half red and half Granny Smith Apples. I used 2 cups of sugar. Next time I'll either use all Granny Smith or reduce the sugar further. I'll also increase the spice some maybe adding some allsipce or nutmeg, but that's just personal prefrence. I didn't peel the apples, mostly because I'm lazy. I cored and sliced them then ran them through the food processor. I can't tell there's peel in the finished product. I did use a stick blender on the mix a couple of times during the cooking. Thanks for the recipe.

Chicken Tortilla Soup I

Yum. This was good. Like others I made a few changes. I left out the hominy, reduced the chili powder by 1/2 a tsp. beacuse my mother (who was coming to dinner) is sensitive to spicy food. I chose to shred the chicken so it would be more evenly distrubuted and used cumin instead of oreagno. Since I was cooking chili at the same time my big pot was already in use. I used a sauce pan to saute the onions and garlic, then added the spices, tomatos (I got the kind with chilis in them since I couldn't find a can of just chilis) and the chicken broth and simmered them. I added the water (hot from the tap)to my crockpot and turned it on high while the rest simmered. I then dumped the tomato mix into the crockpot and added the remaining stuff and let it simmer there until my guests arived. It was a hit all around and several went back for seconds. Thanks for a good, easy recipe that I will make again.

Baked Ziti II

All I heard from my husband was "this is good, is there more?" between bites. That's a rave review at my house. Since it is just he and I I halved the recipie and made some modifications. I used half of a 15oz container of riccotta and added a full can of diced tomatoes. I also added a generous shake of basil and a bit of garlic. Next time I will use Italian spiced tomatoes, drain them very well (ours was a bit "juicer" than I like) and maybe add some red pepper flakes for a little kick. Thanks for a great and very easy recipe!

Jay's Signature Pizza Crust

I like it. It comes out every time. It does make a lot of dough though. I usually make one large pizza and a smaller thin crust one. I use my stand mixer to mix and knead it and it works great.

Chicken Marsala

I thought this was ok. My husband didn't like it (but he's picky). I should have listened to other reviewers and used less oil. I would have liked more of a less oily sauce. I might expirment with this again.

Amy's Cilantro Cream Sauce

This turned out WAY too hot for my family to eat. I even added an extra block of cream cheese to try and cool it down but wound up throwing the whole thing away. I must have gotten some really spicy tomillia salsa. I'll try this again with regular salsa.

Downeast Maine Pumpkin Bread

I made this late Sunday evening and took 1 loaf to school (I'm a teacher) Monday. It was gone by 4th period. I had many requests for the recipe and will make it again soon. It does get better with age. I thought I had over baked a bit but the next day it was very moist. Oh I didn't have any cloves so I subbed Pampered Chef's Cinnamon Plus (a spice mixture) and I think I inaddvertantly used 1/2 tsp of ginger rather than 1/4 tsp. But it was so good I'll do it again. Thanks for sharing.
