Maple Salmon
I threw my own version of some splash cookin to get those hot and sweet flavors, I love, by adding a half cup local brew beer( Northwest thing ), a dash of spicy mustard, four shakes of your favorite hot sauce, and along with the staples of the delicious recipe of Maple Syrup and Soy, and of course garlic, I added fresh local honey, and in exchange for salt and pepper used Uncle Lou's Hot and Spicy, and Herb and Garlic for seasoning. I baked low for 15 minutes(used fresh salmon from Costco), then brolied for 15 at 500, marinating every five minutes. It came out moist in the middle and so yummily coated on top. I used a glass cooker with foil for the low part, and took off foil for the briol. Had no idea what I was doing, except I had salmon, syrup, garlic, and soy sauce. LOL

Baked Chicken and Brie
I give it 5 stars because it was so simple to make. My man who is a lover of the red meat, who doesnt say much when I say its fish or chicken for dinner, told me this was the best chicken I have ever made. I about fell down. The only thing I changed was I used the seasonings I wanted on the chicken, and I broiled the tops a little crispy before adding the brie, I used wine not beer. Next time I am going to add some raw thinly sliced red onions or aspargus under brie for some crunch!
