Soft and Chewy Peanut Butter Cookies

Reviewed: Jan. 30, 2002
I was looking for a recipe to make for my hubby and kids (I do not like peanut butter cookies). BUT OMG! These were outstanding! They were soft and chewy and really tasty! Do make sure to use 2 1/4 to 2 1/2 c of flour and only 2 eggs, or they spread out and get too crunchy/burnt, and also VERY important...only cook for 12-13 minutes if your oven temperature runs correctly. They will not look done at first, but let them sit in the pan for 1-2 minutes and then put them on a cooling rack, they turn out PERFECT! I will never make another pb cookie again, and we are making the recipe now for the second time this week! LOL

Baked Fake Steak with Gravy

Reviewed: Oct. 16, 2002
My family loved it, especially my teenaged cousins and my own teenagers, lol. I did use a little gravy flour to thicken the gravy. It was a cross between salsbury steak and meatloaf.

Easy Slow Cooker French Dip

Reviewed: Oct. 16, 2002
I overcooked mine a little and the meat got too dry, but if I hadn't this would have been wonderful. The beer really does give it a wonderful flavor! Just like in the deli--I always wondered what that flavor was!!

Irish Cream Chocolate Cheesecake

Reviewed: Nov. 27, 2002
I am not sure what went wrong, but I followed the directions correctly, and it turned out too creamy. Not like a cheesecake (new york) but like a cheese pie. And the flavor was off. I read so many good reviews that I am wondering if it was my irish cream, or what, but my cheesecake turned out nothing like the reviews....

Chicken Delicious

Reviewed: Nov. 27, 2002
This was excellent--I cut my chicken into big chunks before cooking (about 2 ") and then served the finished product over egg noodles. My company loved it too, everyone took seconds, and asked for the recipe. YUM!!

A little time consuming, but worth it, very good! Next time hubby requested chicken in this same recipe, I think that is a great idea! But also very good as is.

Pretty yummy. I doubled it for my family of 6, but next time I will use less butter...I think it was only too much bc I doubled the recipe. My hubby and kids loved it!

Cranberry, Sausage and Apple Stuffing

Reviewed: Jan. 1, 2003
This was very good, I just thought it was OK when I first tried it. BUT if you let it sit for about half an hour or so-long enough to soak up the juices and flavors-it was excellent!! My guests loved it-I made it for Christmas dinner. Very flavorful.

Pumpkin-Praline Cheesecake

Reviewed: Jan. 1, 2003
It was ok. The flavor was more of pumpkin pie than a cheesecake and I prefer a dry cheesecake to the creamier ones. If you are a lover of true cheesecakes, this is not for you, but if you like cheese pie type desserts, this was perfect. The flavor was good tho.

Delicious!! Not overly horse-raddishy, but added a nice subtle flavor and VERY creamy! It was excellent with our prime rib roast.

Slow-Cooker Pepper Steak

Reviewed: Apr. 11, 2003
Pretty good. I'd add more seasonings next time, like some red pepper flakes as others have suggested and more garlic! It was good over egg noddles, but I might have liked it better over rice. And I think for some reason the sauce needed more thickening for my taste. But an overall good recipe and easy.

Grilled Salmon I

Reviewed: Apr. 17, 2003
Lots of flavor. This would also make a great marinade before smoking the salmon. Very good, and my hubby even said it's the best way I ahve ever cooked salmon (and he liked the other ways lol). Thanks Tina...
