Sooooo good! I made this for Easter and it was gone that day. Out of 6 adults and 4 kids, all loved it. It is moist and delicious. As far as the other reviews: yes it does need a day for the flavors to blend, I made it Saturday and it was pretty good, but by Sunday wow! I also took the other advice and used applesauce for half the oil, and used brown sugar for half of the white. For the frosting, I also only used half of the powdered sugar. It was perfect. The cake was very moist! Thank you so much for this recipe Tammy! I have tried to make carrot cake 3 times and it always turned out bad. No more! :)
