Bacon Mushroom Chicken

As is, 4 stars. Was good, but too bland for our tastes, and a bit too time consuming. SO, I just made it again, but this time I used boneless chicken, sliced into even and large bite sized pieces. I seasoned it with smoked chili powder, onion powder, garlic powder, salt and pepper. Fried the bacon, removed, added a little butter to the bacon drippings and sauteed/fried up the chicken. Added some mushrooms and cooked until done. Removed chicken and mushrooms and set aside with bacon. Added cream to pan drippings, cooked down a bit. Added meats and mushrooms back to pan to reheat and voila! Took it from 4 to 5 stars.

Oatmeal Chocolate Coconut Chewy

Ooohhh hoo hooo. These are GOOD! I love a good chocolate chip oatmeal cookie, but these kicked it up a notch. Very good!! Perfect recipe, no changes necessary!

Pecan Pie Tarts

These were just okay. I've had better. The filling and crust amounts didn't match up, I had way too much crust, way too little filling. The crust was pretty flavorless too, so maybe a little less crust and a little more filling would make these pop a bit more in the flavor department. The "Maple Pecan Shortbread Squares" from this site are a MUCH tastier option to a pecan desert. And easier too!

Maple Pecan Shortbread Squares

SO GOOD! These were okay when pulled out of oven, but they were AWESOME the next day. The BEST! Flaky shortbread, crunchy pecan pie like topping. Did I mention SO GOOD? They didn't have a chance at my house. I will double next time!

Scottish Shortbread II

As written 4 stars. After following another reviewer's advice for very traditional Scottish shortbread, I WEIGHED 2oz sugar, 4oz butter and 6oz flour and put it in a round pie pan, this was PERFECT. Cut into wedges while it was hot. Let it cool a bit, and it was crispy outside, tender inside, flavorful and buttery. YUM.

Scottish Shortbread III

Gave 4 stars as written. Was 5 with my changes: used about a cup less flour (maybe 4 1/4 cups total) and added a tsp vanilla. Perfect! Makes a good amount too, which is nice since these are a big hit!

I liked this, but my uber picky husband and kids LOVED it. Will be a regular on the menu. (Doesn't need as much butter as called for, and I used alternate sweetener to the sugar, still good!)

Classic Macaroni Salad

VERY sweet, glad I only used half the sugar called for! Yes, classic is supposed to be on the sweeter side, but this was way too sweet. Okay base recipe, did tweak quite a bit for our tastes though, and with the sweetness and need for alterations, I give it two stars...

White Chili with Ground Turkey

DELISH! A new favorite regular item for the dinner menu. I didn't put as much liquid as the recipe called for, as per other reviews, and I'm glad. It would have been soup, not chili. I also only used half of the cinnamon, for our family preferences. The rest of the recipe was followed to a T. VERY good!

Black Joe Cake

Needed a little something flavor wise...but definitely moist and sort of "fudgy" in texture. It was okay tasting, but like I said missing a little something. Would maybe be good with chocolate chips for added flavor.

Sugar Free Eggnog

I'd just use the soynog at stores, but its so full of sugar! I made this one with almond milk, so it wasn't quite as thick, and had a slightly nutty flavor which required quite a bit more spices and rum flavor but overall great recipe for those who can't have dairy (use soy or almond)/sugar or either.

No-Noodle Zucchini Lasagna

I loved it, the family missed their pasta, but tolerated it. I did broil the zucchini "noodles" for a few minutes to help finish drying them, as I've done this for another recipe and it seems to help!

I added a pack of ranch dressing mix to the cream cheese. With that addition this is 5 stars. Used other suggestions of picking LARGE peppers so the heat was milder (worked) and soaking in a bit of cold water after de-seeding/de-veining...

Fish Chowder

As written this recipe is 3.5-4 stars. It is a good base. However, AS IS the recipe is bland and a little "off". Once I doctored it, it was 5 stars. I noticed many (if not most) people rating with 5 stars made changes. How can you give a recipe 5 stars if you have to change it? That means the original recipe isn't a 5 star recipe...the one YOU created with changes is! *ahem, okay stepping down from soap box* LOL Anyway, I also made changes as recommended by other viewers (cooked a few slices of bacon chopped; skipped the mushrooms; cooked veggies in 1T bacon grease, 1T butter; also used fat free half and half instead of evap milk; added a LOT more OBS as well as a little cajun seasoning; used only half of the flour and instead mashed about half of the cooked potatoes with my potato masher for thickening without a goopy flour taste; and finally, garnished with fresh cut chives and that cooked, crumbled bacon...YUM). Although I did make adjustments, I still say kudos to AMYTHE for sharing this good base recipe. Thank you!

Peach Pie the Old Fashioned Two Crust Way

Okay not sure if it was something I did, or the recipe, but I followed the recipe exactly, even added the lemon juice in a colander to let extra liquid run off, and my pie still didn't set! The pie filling was all over. We let it cool a few hours before slicing so that wasn't the issue either. Not sure. Any way flavor was great though.

Bacon Cheese Frittata

Fantastic! Not only was this tasty, it's also versatile and super easy!! I did add mushrooms, chives, bell pepper, and potatoes, so I also added 3 extra eggs and cooked it in a 9 x 13 pan. Highly recommended! Yum! Oh btw, out of many picky eaters in our family of 5, ALL 5 raved over this even the child who will not ever eat anything with eggs in it!!
