Herb Watermelon Feta Salad

As the recipe is written, for my family's taste, it rates 4 stars. After making it as written once, I tweaked it to suit our tastes better--I omitted the basil and cilantro (I LOVE both of those herbs, just not in this salad) and I use white balsamic vinegar (it is not as overpowering in this salad). With just the mint, it is wonderful! I have also made the dressing with and without the lime juice based on what I had, and we like it both ways. This is a wonderful recipe--summer-y, fresh and unexpected. This is always a hit when I take it to get-togethers, especially with the people who thought they'd hate it.

Spicy Bok Choy in Garlic Sauce

This is really a great tasting side dish. It is so easy, fast, and delicious. The recipe says it takes 30 minutes total time. It has never taken me more than 15 minutes though. I use pre-washed baby bok choy which helps cut down on prep time. I've made it exactly as written with oyster sauce, and without using more soy sauce and a couple of dashes of fish sauce. I like it both ways. As written, it's wonderful! We love this dish!

Grilled Pork Chops with Balsamic Caramelized Pears

Made this tonight and the family loved it! As for the brine, the salt and sugar will dissolve in room temperature water if you simply stir it for a bit before adding the pork. I used coarse salt and sugar in the raw (also large granules), and had no problems at all after stirring it. I found no need to add any salt to the chops before grilling--brining is sufficient after 1 hour. I'm sure dried rosemary would work in a pinch, but fresh rosemary is really added so much flavor. I tried to keep the onions in a wedge, but they fell apart as they browned. I didn't see this as a problem though. Only alteration I made was to use peaches instead of pears--yummy!!! Cut into large wedges so they wouldn't fall apart or get mushy. We loved it, and it will be in our rotation.

Big Al's K.C. Bar-B-Q Sauce

This sauce is really good! I made it tonight when I realized I was out of bottled sauce. I didn't have the liquid smoke, and I omitted the butter; otherwise I followed exactly. I love the balance between the vinegar and the sweet--perfect! I will be using this recipe from now on instead of the bottled sauce.

Mushroom Orzo

I made this tonight, and my husband and I loved it. I gave it 4 stars instead of 5 because as written, there is a definite wine taste which my kids weren't crazy about. But we loved it! Other than subsituting chopped onions for pearl (I was out) and fresh garlic for powder (personal preference), I followed it exactly. Next time to make it more kid friendly, I might substitute broth for the wine--but then again the adults were happy with the wine taste! Will definitely make again.

Cream Cheese Frosting II

My 11 year old made this by herself to frost a devil's food cake. Everyone in the family loved it. It's not too sweet; more cream cheese taste. It's very versitile. We used the leftover frosting on cinnamon rolls (the Jiffy Cinnnamon Rolls from this site), and they were delicious!!! It is very easy to make, and takes only a few minutes.

Sugar Cookie Icing

This recipe is definitely a keeper. I've tried a few recipes in the past, but have never had great success. This one works so well! I didn't try it with coloring--the kids wanted white icing. It was the perfect consistency. I did need to thin it out a little; instead of using more syrup though, I used a little more milk.

Deliciously Sweet Salad with Maple, Nuts, Seeds, Blueberries, and Goat Cheese

This salad is amazing. What makes it 5 stars is the dressing. I had to use olive oil because I didn't have grapeseed, but I don't think it detracted from it at all. The proportions are just right. And it works so well with the fruit and the tartness of the cheeses. This is definitely on the sweet side, but that's the way I like salads and dressings.

Soft Christmas Cookies

This recipe absolutely deserves 5 stars. It is so easy to make and very yummy! I didn't change a thing with this recipe, and had no problems with it. I put the dough in the refrigerator overnight so we could make cookies quickly today for Santa. The dough rolled out great (although next time I might let it warm a little because it gave my biceps a workout!). I did bake at 350 degrees rather than 400 degrees, and it took about 10-12 minutes. I kept a close eye on them because once these start to brown, they brown quickly. I have already had 2 (they have barely cooled), and am trying not to eat more! I usually buy premade sugar cookie dough, but I will use this recipe from now on.

Earl Grey Martini

This drink is amazing! I first had it at the Encore hotel in Las Vegas at one of their bars--it was their signature drink. I fell in love with it and had to replicate it at home. And this is it! I use vodka instead of gin (that is just my preference), and couldn't be happier.

Whole Wheat Beer Bread

I have to give this 5 stars for the incredible easy factor of this recipe and how good it tastes. I followed it exactly and will not make any changes at all when I make it again (and I will). I used a summer pale ale and think I will stick with a similar beer in the future because it was perfect. It is heavier than a yeast bread (obviously) but perfect for toast and to accompany soup, chili, etc. Or just hot out of the oven with butter! Yum!

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are excellent. The whole family loved them, and my husband said I was lucky he left any for me to eat! I followed the directions exactly but used Silpats instead of parchment. They definitely have a lot of chips in each cookie but we like that. And these cookies, although still good after 1 week, are fantastic eaten within a couple of days.

Egg-Yolk Sponge Cake

I liked this recipe, especially for its simplicity and low calories count! I love the orange flavor of it--not too much to overpower the cake, but enough to taste. We ate the cake last night without adding anything to it, and it was delicious. I was surprised by the texture of the cake though; but I'm wondering if I did something to it. It was slightly dense and a little chewy. I guess I expected more airiness to it. But the flavor is right on. I will definitely make again and add whipped cream and berries.

Cilantro-Lime Dressing

This really is amazing dressing. The cilantro is not overwhelming; in fact, it doesn't even seem that prominent a flavor (but I love cilantro, so the more the better for me). I think I accidentally added slightly more sweetener than called for, so I added more lime juice to cut it down. I did use agave syrup because my honey was crystalized. This is fantastic dressing; a nice change from my usually vinagrette. I will make again for sure! Thanks for sharing.

Jiffy Cinnamon Rolls

I wish I could give these more stars! The ease of the recipe is perfect. I made at 10pm last night when I saw this recipe on the Daily Recipes list, and it took me less than 15 minutes. I took another reviewer's advice and shredded my (very cold) butter to make cutting it into the flour mixture easier. (From now on, I will do this any time I need to cut in butter.) I already had cinnamon sugar mixed up, so I just melted 1/4 cup of butter (not the 1/3 cup listed in the recipe), brushed it on the rolled out dough and then sprinkled the cinnamon sugar. This worked really well and I saved calories because I didn't even use it all! Just a wonderful tasting cinnamon roll that my kids and husband loved!

Blackberry Cobbler II

This really is delicious. I couldn't use my iron skillet so I just boiled the berry mixture in a saucepan and dumped into an oval casserole dish when it was done. I also used Smart Balance butter blend sticks (NOT the tub) just to experiment. And it came out wonderfully. I honestly can't tell the difference. I do agree with other reviewers on a few things, notably the sugar amounts. (1) Reduce the sugar in both the batter and the fruit, especially if your blackberries are sweet on their own. I have a monster sweet tooth but even this was too much for me. For batter 1/3 cup is enough, maybe even 1/2 cup. For the berry mixture, 1/2 cup is good, maybe even less if your berries are really sweet. (2) Add cinnamon (1 tsp) and vanilla (1/2 to 3/4 tsp) to the batter. This really makes a difference. Overalll, great recipe. Absolute keeper!

Vanilla - Chocolate Powdered Sugar Frosting

I was disappointed in this frosting, especially considering the reviews. It is very buttery--frosting even separated some. It definitely turned out more like a glaze than frosting. I will try another recipe next time.

David's Yellow Cake

This cake was okay (for my taste). It's definitely no where close to a boxed mix, which is good in my opinion. It's not as sweet and I liked the texture. But the 3 stars is because, for my family, the flavor just seems to lack something. Maybe more vanilla? I will try another recipe next time though.

J.P.'s Big Daddy Biscuits

My kids inhaled these biscuits. Truly fluffy (which we love) and not dense like the traditional Southern biscuits we eat. I used butter instead of shortening (an ingredient I don't use) and didn't have any problems. I also followed the recommendation of other reviewers and used my food processor, which made it easy. I will make these again, but I will add a little more salt and maybe even an extra tbp of sugar. My husband and I thought they needed more flavor which is why I gave the recipe 4 stars instead of 5.
