Balsamic Roasted Pork Loin

I loved it. I would eat cardboard soaked in vinegar, so I might be a bit biased, but one of my dinner guests went back for 3rds even. Another left most of his on his plate. I didn't want to embarrass him by asking why. My husband gave it an 8 out of 10. My roast was 3.5 lbs so I adjusted the ingredients. It cooked a little over an hour and a half. I don't know exactly how long because I use a thermometer. I basted during the cooktime. It didn't look like the photo provided, but it looked pretty good. Very very tender.

Allie's Delicious Macaroni and Cheese

This was a delicious mac and cheese. I used shells. I didn't add the ham, and I used the cheeses I had on hand, cheddar, colby and montery jack, and muenster and it turned out great. I think it's really in the cheese sauce. I thought a quart of milk was a bit much and I was half a cup short, but it turned out great. I cooked it for 30 minutes and it was perfect for us.

My Sister's Favorite Potato Salad...Ever

Very very tangy. I omitted celery salt because I didn't have any. I did add just a tad more mustard and 4 eggs. I'm taking it to a church function tomorrow, and won't know until then how it will be received, but I like it. It was easy to prepare. I love vinegar and everything vinegar, so it was perfect for me.

Black Bean and Corn Salad II

First time making--- I made it as is without the cilantro. I also used grape tomatoes instead of chopping a tomato. I did find that it was not as spicy as I had hoped, but the dressing is very good. I will finish reading all the reviews for suggestions on how to spice it up. I'm thinking of adding a jalapeno and cumin. I also like the idea of adding bowtie pasta to it. Mine looked much different than the submitted photo because it had, get this, black beans in it :) My only real complaint is that the recipe calls for frozen corn and leaves out the cooking the corn part in the directions. ------- This is the 2nd time I made this recipe. Last week it didn't dawn on me to use frozen corn on PURPOSE. I thought it was a mistake. I added frozen corn this time and loved it. I also decreased the olive oil to 1/4 and increased the fresh lime juice to half a cup. I doubled the cayenne and I also used the cilantro this time. I'm not a huge fan of cilantro, but it is good. I'll probably add a smaller amount next time. I also used red and green peppers because I had a green pepper to use before it went bad. I like the versatality of this recipe. My husband and I used this tonight as a quick dinner solution. We can stand in the kitchen and talk while we chop and there is no need to turn on the oven, which is a plus when it's 103 outside.

Sweet Potato Casserole II

I found this recipe 2 Thanksgiving's ago. It was a hit. I made it today for a Potluck we had at work. I was asked for the recipe, and had to come print it out. Didn't realize I hadn't left a review. It's FANTASTIC, easy to make, and sure to become a family favorite.

Chickpea and Tomato Soup

This recipe was quick and easy to make. I love chickpea's, but it just didn't quite fit in this tomato soup. Boyfriend didn't even touch it. I like to give recipes another try. I may try again in a few months.

Bulgur Chickpea Salad

I made this for me and a vegetarian friend. She loved it. The texture took a little getting used to, but yum. I thought it was better the "next day". My boyfriend, who doesn't like to try new things wasn't jumping up and down for it, but I thought it was great.

Best Brownies

I got a craving bor brownies last night around 1am. So, I got online and found this recipe. The brownies turned out FANTASTIC. I made the brownies and the icing. I fudged the icing up the first time because I didn't soften the butter, but I tossed that batch and tried again, am glad that I did. Definitely plan on making these again.

Chicken Tikka Masala

WOW, a lot of salt suggested. I didn't use any. A lot of steps involved in the making of this recipe. It tasted pretty good, just don't know if it was worth all the fuss: making the marinate, 1 hour marinate, then grilling, then making the sauce, then simmering in the sauce. My boyfriend liked the chicken off the grill, was a really spicy chiken, may try the marinate on a kabob some time.

Red Enchilada Sauce

Easy Pork and Sauerkraut

I love sauerkraut. I found this one intruiging. I used a bottle of Guiness in this recipe. I didn't really care for the taste at all. Won't be making it again. Didn't really understand the point of the apple.
