Libby's® Famous Pumpkin Pie

Turned out great! My husband loves pumpkin pie and devours grocery store varieties in a couple days. He requested a homemade version and I tried to oblige, never having made this type of pie before (I'm not a fan of pumpkin pie). Following the advice of other reviewers, I substituted 1/2 c brown and 1/4 c white sugar and added 1 tbsp flour to increase density, 1/2 tsp ground nutmeg, and 2 tsp vanilla extract to the wet mix. Covering the crust edges with foil for the first 25 minutes to prevent it from burning was great advice! (I made the No Roll Pie Crust recipe on this site.) I used the whole can of evaporated milk because otherwise the mixture only filled the pie plate halfway. Next time I’ll try just using half to see if it amplifies the pumpkin flavor. My husband said it had a fluffier, airier consistency than store-bought pies and that the flavor was subtle, yummy and "homemade tasting". My brother-in-law, who also loves pumpkin pie, ate it with his hands. I guess that's a compliment to the recipe! Will definitely make again.

No Roll Pie Crust II

Great recipe! I added 3 1/2 tbsp sugar since I was using it for pumpkin pie (Libby's Famous Pumpkin Pie recipe from this site). Mixing ingredients in a bowl rather than the pie plate was good advice to reduce mess. Super easy for someone who had never before made crust.

Double Layer Chocolate Peanut Butter Pie

Before modifications, not very chocolaty. Here's how I improved: used prepared Oreo pie crust, brushed melted semi-sweet choc chips on bottom (microwave on 50% power in 15 second increments until half chips melt; stir until all melt), let harden in freezer 15 min. PB layer: used 1/3 package cream cheese, half & half and 3 TBSP sugar. Topped with 2nd Oreo pie crust and chopped Reese's. Pudding layer: used heavy cream and milk, added more choc chips. Saved remaining whipped topping for separate layer. Several people at 2012 Thanksgiving dinner requested the recipe!

Baked Falafel

Although my husband and I love falafel, we weren't thrilled with this dish. He (the eater) was put off by the texture, calling the insides 'mushier' than typical. As the cook, I thought the prep took considerably longer than 20 minutes. The wet mixture was difficult to work with. Patties didn't retain their shapes and clung to my hands as I tried to transfer from plate to pan for cooking. Also, it would have been helpful to know in advance that spices could all be measured into same bowl, to avoid using (and having to wash) multiple vessels.

Three Cheese Baked Pasta

I followed the recipe with two low cal substitutions recommended by other reviewers: ground turkey and ricotta (for provolone). Perhaps the original ingredients would have infused more flavor. My husband and I thought this was bland. The depth of flavor was similar to that of a frozen dinner. I won't make again.
