Mama's Asian Chicken and Rice

The whole family (minus the 5yr old who wouldn't try it) really enjoyed this dish. It was super easy to make after prepping the chicken. I did take the suggestion of using a cornstarch/flour mixture to coat the chicken before browning. I did not use an egg wash before coating! The sauce thickened up wonderfully and the chicken was delicious. My only complaint is that the orange flavor seemed really mild. Next time I plan on increasing the zest and maybe the juice to see if this helps.

Slow Cooker Lemon Garlic Chicken II

I didn't have time to make this in the slow cooker so I ended up baking it in a 9x13 glass dish. Still came out tender and delicious. I added more garlic and used chicken broth instead of the chicken granules. Paired this with a steamed veggie mix and there were no left overs!

Brooke's Best Bombshell Brownies

Makes the best brownie bites hands down! I did the original recipe and it was PERFECT. I think next time I might try the half white, half brown sugar just to see how it changes the taste. I used my mini cupcake pans and baked them for about 12 - 15 minutes. The centers were slightly gooey, then firmed up on the cooling rack. I got 48 AWESOME bites from just a single batch. BROOKE, you rock.

Slow Cooker Chicken Taco Soup

I made some slight changes like using white kidney beans instead of black beans, adding 1tsp garlic powder, 1/2tsp cumin. I also cooked it for 4.5hrs on high. The whole family LOVED this, which is surprising because one of our sons doesn't do spicy.
