Dilly Potato Salad

This is a terrific low-fat potato salad. I think the dill dressing complements the green onions. Using small red potatoes I didn't have to peel them and the recipe is quite simple to make.

Quick and Easy Alfredo Sauce

I love this recipe, very easy. I used low-fat ingredients where I could, including reduced-fat butter, but of course the parmesan cannot be reduced. We could probably get by on less parmesan. Hence, still a rich-tasting recipe with lesser fat!

Chicken or Turkey Tetrazzini Deluxe

This was classic comfort food. I made it (halved it) without reading the reviews and used the required amount of water. It seemed fairly watery at first but it really firmed up with the leftovers. I used chicken sauteed with spices so that jazzed it up a bit, but any additional herbs will flavor this dish to anyone's liking! Excellent.

Cabbage Jambalaya

I needed to use my largest pot for this recipe. I also added a cup of broth as it needed more liquid I felt. It seemed bland so I added herbs and spices to give it a more Creole taste. The recipe makes a very large amount and I should have halved it as I don't like leftover cabbage.

Beer Butt Chicken

Tender and moist chicken but considering the 2 sticks of butter used, I find this recipe a bit costly and high in calories. Still, it was very flavorful and I used the carcass to make a spicy chicken soup.

Asian Coleslaw

This slaw disappeared - not a leftover! It's rich in texture, colors and flavors. I used only regular cabbage and it was fine. I will have to make it again soon in hopes of using it in lunches.

Lentil Soup

Luscious Lentils! Cooked in the pressure cooker for 20 min at pressure, then a little pureeing. I added cumin, dash of curry, and increased all the spices and spinach for a more flavorful soup. It's hearty and very healthful!
