Beef Barley Vegetable Soup

Reviewed: Mar. 16, 2012
Wow - thank you so much for an excellant base recipe for beef barley soup. i have been trying for a while to get a beef barley that tastes like my dear mothers - and nothing compared! I used this recipe as a base and it is PERFECT - upon reading lots of the reviews, i decided to cook everything in a crock pot - all at the same time except the barely which went in the last hour! my changes were such -using 10 cups of beef stock (home made) / used 4 bay leaves / less carrot and celary because of the frozen veggies / added 4 cloves of garlic / used crushed tomatos instead of stewed / added worshestershire sauce - about 1 tablespoon / and added fresh herbs which my mom always said makes the difference - added thyme / parsley / oregano AND basil. Upped the pearl barley to ONE CUP - to compinsate for the extra stock. cooked for 10 hours as alot of reviews stated on low in my crock pot. YUM YUM YUM Y UM YUM! were were licking our bowls clean and i cannot wait to eat more! it is perfection!

Stuffed Eggplant with Shrimp and Basil

I find it insulting that people can rate a recipe without making it!!!! the calorie intake is obviously wrong! Just make the recipe and then review it , instead of doing the opposite!

Spinach Enchiladas

Reviewed: Aug. 29, 2011
Ohhhhhh MY GOOODNESS!!! i got this in my email, and made it as soon as i got it! perfect, should be a 10 - for perfection! MMM. Note - i have been making green chili enchiladas for 20 years -- same fail safe recipe, always GREAT - but this recipe was intriguing - using the spinach and italian cheese --- wow! It also came our very smooth and silky, the whole house smells like i'm in mexico! I made a few modifications based on my enchilada recipes - first i always use flour tortillas. I mixed green chili enchilada sauce with sour cream, some fresh cilantro and 1/2 a cup of salsa to make the outside sauce, put it on the bottom of pan and over the enchiladas. I like mine wet and soft - also, cooked at 350 for closer to 40 minutes, just cook till it is bubbling and you've got it. What a great thing to be able to visit all recipes and expand your cooking peramaters! THANK YOU!!! this will be in my permanent rotation.

Boston Baked Beans

Reviewed: Dec. 1, 2010
These beans would have been magnifacant minus the extreme saltyness - we LOVE salty food, but 2 teaspoons was WAY TOO MUCH! I will make this again minus the salt. Dissapointing....

Sun-dried Tomatoes I

Reviewed: Sep. 23, 2011
YUM! i have wanted to make sun-dried tomatoes for SO LONG but wasn't quite sure how to do it. I read alot of the review, thanks every one for tips and ideas. Basically i used all dif. types of tomatoes, didn't seed em, i'm too lazy, and let em go for a LONGGGG time. the bigger pieces cooked most of yesterday and are back in today. i like that you can take them out to use your oven for other things, then put em back in when you have the time. the taste is TRULY a rich deep intensity, JUST what i wanted without spending $5.00 on a tiny bag, esp. when you have them growing out of your ears in the summer garden! In the middle of winter i'll pull them out for a 'special' topping on my pizza, for a tiny taste of summer! THANK YOU for the easy recipe!!! You cannot do this wrong! It's failproof!

Panang Curry with Chicken

Reviewed: Dec. 12, 2011
Thank you thank you THANK YOU for this outstanding recipe,,, i am thrilled to say this tastes alot like the meal i love in the asian resteraunts and was SO EASY to replicate!!!!! i didn't even have all of the exact ingredients and STILL it was exceptional. i made it for my brother who is a world traveler, been to Thialand etc, and he said it was spot on! this is a keeper. Next time i will have all of the ingredients and i think it should be 10 stars! i used soy sauce instead of fish sauce per one reviewer and it was fine... next time i'll use the fish sauce.

Raspberry Pie II

Reviewed: Jul. 16, 2011
Wow! i am a very accomplished cook, but i really dont' bake so much - this was the classic 'less is more' recipe --- and wow, it was GREAT!!!! It is my first raspberry pie, based on a mega amount of fresh berries in my back yard --- i increased the corn starch to 3 teaspoons - it seemed good. the problem with this recipe is that 2-1/2 cups is NOT enough berries - i used almost 5 cups and that filled the pie shell - otherwise it would have been droppy. i didnt' increase the sugar - so next time i might add a few more tablespoons. It was PERFECT other wise. took about 10 more minutes to cook then was stated, and i used foil to keep the edges from burning, WOW!!! thank you for an easy delish recipe, worthy of 10 stars! MMMMMM

Easy Pizza Sauce I

Reviewed: Jul. 8, 2011
I am hot / cold over this recipe! The hot part is that it is EASY and i had ALL of the ingredients to make my own sauce on hand --- easy is brilliant! the sauce tasted good - but it was not blow your mind outstanding.... would i make it again in a pinch? Yes - i would - but something is missing... It is also a bit sweeter than i would imagine a pizza suace should be - maybe cut the sugar in half. I will have to play with it. Still - for being homeade i cannot complain! thank you ALL RECIPES! BTW - i used fressh oregano and basil from my garden - that flavor was shining thru the recipe. Also, used 3/4 cup water - so it wasn't runny.

Italian Sausage Soup

Reviewed: Jun. 27, 2011
Wow! Perfect flavor marriage in this soup! I was hesitant as it just didnt' sound like it would rock my world, but ohhhh it DID! I made some small modifications - added an onion in the begining, put some diced red and yellow pepper in - and some parmasan cheese rind for flavor. For the last ten minutes i put 1/2 a cup of small shell pasta as i wanted to have that - and i LOVE what this turned into. I think that if you added NOTHING it would still be perfect as is! Thank you for a recipe i will be making often!

Dulce de Leche Grilled Cheese Sandwiches

Reviewed: May 2, 2012
My girlfriend had me over for brunch yesterday and she prepared this. it BLEW ME AWAY! it is so delish! She used maple bread instead of raisen bread and used caramel syrup for the dulce de leche - she said it was easier to just buy it. this was the best thing ever - i will be making this for guests for years to come in my kitchen. surprising and unique and very individual. BRILLIANT! EASY!!!

Pad Thai

Reviewed: Dec. 12, 2011
My 5 stars is because i read alot of reviews, and i got it spot on. the recipe is good but the amounts of the ingredients are NOT correct, the sauce needs to be tripled in order to be BARELY enough,,, 12 ounces of rice noodles is alot of noodles, but with extra sauce it is good. i also used only one egg, wich was plenty. Added 2 tablespoons of peanut butter per another reviewer and used LIME,, not lemon.. any pad thai you get in a resteraunt uses lime... with those modifications you are going to get something REALLY special,,, i will be making this alot in the future. my husband who is asain approved very much so!

Balsamic Cream Sauce

Reviewed: Jun. 15, 2011
Wonderful sauce!! I made it last night and served it over unsalted pasta! The texture is spot on - alot of sauces clump, but not this one. While making this i felt it was too salty, but once i mixed it with the pasta it was PERFECT! Make as is, or do what i did - I added roasted red & yellow peppers, garlic, and spinach - to create a type of Primavara. I also used 1/2 and 1/2 as i had it and not heavy cream, still came out thick and dreamy. Next time i will make this with ONE bouillon cube to see if it cuts the salty down, but otherwise this is truly a delish and EASY sauce to make. Cannot go wrong here!

Mama's Best Broiled Tomato Sandwich

Reviewed: Jun. 1, 2011
OH MY --- Are there even words to express the simple yet complex flavors of this masterpiece!!! My tongue was dancing with flavors!!!! It's brilliant this recipe, pretty much have all the ingredients on hand. i do suggest using your own fresh herbs, yum. ALSO, i have tried this on 3 different types of breads / rolls - white sandwich bread, slider rolls, as well as my homeade rolls, it doesn't even matter these come out gooey and fabulous! I also poured the extra oil / vinegar misture over the top, wich the parm seems to dance wtih. I will be making this the rest of my life. It was something you would taste at the million dollar priced Vegas resteraunts!! THAT GOOD! I wanted to add that i used garlic powder as well as a bit of crushed red pepper to the mayo. LOVE THESE!

Polish Chicken and Dumplings

Reviewed: Nov. 2, 2011
I am rating the dumplings here, as i make my own version of chicken soup, but the dumplings are AMAZING!!! One important note - the amount of dumplings to soup is way off. next time i will make 1/4 of the amount, it's simply way off in calculation. make sure you make tiny little dumplings, they are very hearty and dense, but i liked it that way.I also used butter instead of oil, and chicken stock instead of water, that might have improved the overall result. I will use this in my chicken soups now instead of any pasta / grain. My husband and father thought it was AMAZING, me too. Thank you so much for the recipe. will be making this again THIS same week, that good!

Chrissy's Sweet 'n' Sour Tomato Salad

Reviewed: Aug. 16, 2011
I'm so glad I am rating this the day AFTER i made them. they really taste BETTER when the flavors sit overnight! I made it 100% as written, it was PERFECT! i enjoy the simple dressing, very nice flavor. Others complain it is too much dressing, just make the dressing seperate and use as much or as little as you need! I decided to add some cuke today, make sure you weep them before you add, or it will have too much water. Also tried with some herbed goat cheese, VERY VERY delish! The only reason i gave it 4 instead of 5 stars is because it didnt' taste that good last night, it was like soup tho - next day is WAY better. i will make this again for sure when summer tomatos are in abundance. thank you for the recipe chrissy!

Amazing Spicy Grilled Shrimp

Reviewed: May 23, 2011
I hate to comment bad on something that is SO beloved by AR users! So with all due respect, this was just 'all right' for us. I actually had it marinating for 5 hours. the marinade is a BEAUTIFUL looking blend with the red and green contrast. However the taste was just ok. I recomend a more simple trick, go on line and purchase the BEST hot sauce on the planet - it is called "valleydoll" and you can order it and have it shipped to you from teh Virgin Islands. I mix a little of it with olive oil / salt / pepper - to create the most dramatic awesome tasting grilled shrimp! and it's SO EASY! it's worth the shipping cost! If you try it you will thank me latter. Happy eatting!

Vegan Bean Taco Filling

Reviewed: Mar. 21, 2011
Very NICE! i followed your recipe minus the cornmean, and oops, i had no cumin and it STILL was outstanding! I recomend using a higher end salsa for this - like a Jack's Special with Cilantro, we had it with burito's and yellow safron rice, even my husband liked it, thank you for the recipe!
