Morning Glory Muffins I
Picky-eater 2 Yr Old Son APPROVED! I replaced raisins with dried cranberries (husband's preference) and apple butter with unsweetened apple sauce (on hand). I did not make the nut topping but included wheat germ within muffin and reduced sugar, omited salt, etc. My intention was to freeze the batch but I kept 3 at room temp. My son not only tried one but ate the whole thing (minus the cranberries he picked out). AMAZING as he will NOT eat banana or other muffins (yet loves bananas), cupcakes or even his own birthday cake. I made a healthy version so I don't feel guilty about sugar etc content to use muffin as part of his lunch. Freezes well and packs easy for travel or babysitter. Husband & I have yet to try them but plan to take frozen ones to work for quick snack. I will continue to experiment with variations but am thrilled my son liked them. I did not even expect him to try a piece. He'd usually stare at the food then hold it close to his mouth and say "no thanks mom, I eat yogurt or fruit" and wait to see what I offer. He rarely eats beyond pancakes, waffles, yogurt, fruit, pasta w/ homemade sauce, broth or tomato based soups. Thanks, Jaclyn!

White Chocolate Raspberry Cheesecake
I followed this recipe but modified for chocolate/peanut butter version using choc chips & pb chips. Everyone raved about it on Easter! Thanks for posting the recipe!

Apple, Cranberry, and Pear Crisp
Virtually effortless & amazing! If you can cut fruit, you can make this - that simple. My husband eats fruit but would not be considered a fruit lover, but he raves about this. I included it in my Thanksgiving menu this year and will serve it as our son's 2nd birthday party too (per husband's request). I usually substitute healthier ingredients in my dishes so next time I'll try whole wheat flour and sprinkle wheat germ on topping to increase nutritional value. As with most of my recipes, I reduced the sugar when I made a whole tray of this. Sweetness of fruit and honey was enough.
