Scrumptious Salisbury Steak in Mushroom Gravy

I'd never thought of adding poultry seasoning to ground beef before but it definitely made the meat delicious. I'll probably start using it in my meatloaf too. I used seasoned bread crumbs instead of the cracker crumbs, fresh mushrooms instead of canned and half milk and half beef broth for the gravy. I found that this resulted in very bland gravy, so I quickly dissolved a couple tablespoons of bouillon in some hot water and added that to the gravy, plus a ton of pepper. I did end up adding a bit of corn starch water too because I like a thick gravy. It was wonderful. Hearty and comforting. Will make again!

Eggnog Gingerbread Trifle

This was pretty good. I did use creamy Cool Whip instead of home made and also doubled the recipe so I'd have a full trifle bowl. (I gave it 5 stars because I changed the recipe and don't believe in giving anything less than 5 stars if I don't follow the recipe exactly.) I was able to find the gingerbread mix (look for it near the brownie mixes instead of the cake mixes) but actually think the spice cake mix suggested by many might taste even better. (I'm a big fan of spice cake.) It definitely makes an impressive dessert as a trifle should!

Spicy Garlic Lime Chicken

This is one of the few times I actually measured spices; usually I just ballpark it. VERY good recipe and one I will make again. I did add a bit of chicken broth to the lime and garlic, maybe 1/4 cup and let it simmer an additional 10 minutes or so. I also sliced the breasts into medallions, placed them on a platter and poured the sauce on top. It really permeated the meat that way. Excellent, super easy recipe.

Hearty Jambalaya

I loved how easy and delicious this was. I forgot to buy tomato paste so just used a 14 oz. (I think) can of tomato sauce and did add a little chicken broth to thin it just a bit before I added the shrimp at the end. This is one of those dishes that actually tasted better the next day. Even the shrimp re-heated nicely. I will make this again, most definitely.

Festive Cracker Spread

Definitely a keeper...so good and super easy. My stoic husband said, "This is REALLY good!" and for him, that's kind of amazing. I followed the recipe except I omitted the green bell pepper and used green onions instead of regular onion. I think a sweet bell pepper (orange, red or yellow) would have been a great alternative to the green and will try it that way next time. And there will be a next time...

Chicken Soup Au Pistou

Love this soup! My only changes were I used1-1/2 pounds of chicken tenderloins instead of 1/2 pound breast, petite diced tomatoes instead of whole, a can of Italian green beans (drained) instead of frozen and some garlic powder. The dollop of pesto is what makes this soup special. Soooo good on a cold evening.
