Chocolate Mint Sugar Cookie Drops

These cookies are OK. I took someone elses suggestion and only used 2/3 cup oil, if making them again I would use the full 3/4 cup. I also substituted in almond extract for the vanilla. The cookies don't really spread out when baking, so I flattened them a little bit with a glass. As far as taste goes, these are great. They are a pretty light, delicate cookie. I'd probably make these again.

Old Fashioned Coconut Cream Pie

I made this for our family thanksgiving this year. I am not a huge fan of coconut cream pie, but my dad is and he LOVED it. So I would probably make it again just for him.

French Silk Chocolate Pie

This was soooo good. It literally melted in your mouth. I will definately be making this again. I did not bake the pie as the recipe states, I just mixed and chilled.

Broccoli with Garlic Butter and Cashews

Husband LOVED it! Next time I make it I will cut back the soy sauce to 2T-just too salty for me. I took other suggestions and cut the butter down to 3T. Other than the saltiness, it was very good.

Chicken Crumb Coating

This turned out pretty good. The only reason it wasn't my favorite was because I tried to do something different. We used buttermilk instead of regular milk (because we had some leftover) and it just left that bitter buttermilk taste. So I'm sure this recipe would be wonderful if I didn't try to do different things.

Pumpkin Cheesecake in a Gingersnap Crust

This cheesecake was a big hit at our family Thanksgiving. I agree with other reviews that there is too much butter in the crust. I forgot to put a pan under it when it baked and all the butter dripped onto the bottom of the oven. So, If you are going to use all the butter, then put a pan underneith to catch the drips. I also made a pumpkin spiced whipped cream to go with it, that was really good!
