My Crab Cakes

Yummy! I was leery about my ghetto can of crab (99 cent store special) so I threw in about 8 finely chopped frozen prawns and improvised a bit -- Tabasco-flavored Cheez-its, saltine crackers & bread crumbs, and I skipped the salt & cayenne. No dry mustard. It was amazing!

Mexican Bean and Squash Soup

Great tasting vegetarian soup - I used vegetable broth instead of chicken broth. I had a surplus of squash from my garden so this recipe added to menu variety/possibilities. I love the sweet and nutty flavor of butter squash and the spice was a nice contrast in this dish. I used fresh soaked beans and skipped the sour cream. I didn't have lime, but I'm sure it would have been more amazing.

The Best Vegetarian Chili in the World

Great base recipe. I usually grill & freeze a bunch of jalapenos, garlic, and tomatoes, and keep them in ziplock bags. This was the perfect time to use some. So, I had that substitution plus 2 carrots and a tsp of cinnamon to give it a slight sweetness. I did use fresh soaked beans instead of canned, and I simmered the chili for 2 1/2 hours---adding the corn in the last 15 minutes. Didn't have crumbles, but it was delicious with shredded cheese sprinkled on top and served with sweet corn bread muffins. NOTE: If you use dried beans and cook in a slow-cooker, be sure to soak them and make sure they are cooked through before adding the sauce; otherwise, tomatoes and the acidity of the sauce will harden the beans.

Vegetable Masala

Omitted the green beans and used garbanzo beans. I like more sauce so I added sm can of tomato paste with water & veg broth. Also, I added more garam masala. Very tasty!

Quick Eggplant Parmesan

Simple short recipe! I used Panko crumbs. To make it a 1-course meal, I made my own sauce with tomato paste, garlic, yellow squash, onions, bell peppers, mushrooms, basil & oregano and I added cheddar cheese to the other cheese. I also peeled & soaked the EP for 30 min in salt water, drained & dried well. Fried in light olive oil before baking. Served with french bread.
