Raspberry and Almond Shortbread Thumbprints

I have to give it 5 stars because everyone went nuts over these. Made a double batch for Christmas. Don't think I altered anything in the recipe except when I was running out of icing into the second batch, I got lazy and just mixed powdered sugar and milk omitting the almond extract. I do think it's "almondy" enough. These are wonderful and way easier than making Kolackys which are similar. People mistook these for kolackys. :) Will definitely be making these again and again.

Zesty Slow Cooker Chicken Barbecue

Followed the recipe and did what others suggested. Used a quality barbeque sauce and added 1 teaspoon liquid smoke and minced garlic. Served on fresh bakery sandwich buns with sides of corn on the cob, cole-slaw and chips. Wow- what a tasty meal! Like going to one of those fancy smoky bbq joints. I got a late start and cooked it for 3 1/2 hours. Came out perfect.

Fresh Southern Peach Cobbler

Made a double batch because I have a gazillion juicy white peaches from my tree. (Double batch didn't put a dent in my harvest- but I digress.) Great recipe- delish. Made it exact to spec. Cinnaminny ... and definitely southern taste and feel- like something you would get in a bed and breakfast. Yum :)

Love this easy, yummy recipe! Loved that it was all homemade and not from a can. I used the cream of tartar- no problem. Next time I will brush with butter or add onion and make onion bisquits. So many things you can do with this ...

Good recipe. Couldn't be easier. I would never try this with skinless chicken- afraid it would come out too dry. It browned the skins really nice and the orange was perfect. I followed it to a tee. Was moist. Will make it again.

Mediterranean Chicken with Eggplant

I liked this recipe. Me and my 9 year old daughter gave it a thumbs up. My very picky husband doesn't eat eggplant and I thought this would turn him around, but it didn't. But he did eat two helpings of the chicken. I also took the advice and salted the eggplant and put in a colander to sweat it out. I marinated the diced chicken in balsamic, EVOO and lemon juice. I cut the eggplant a little thicker so it wouldn't be mush. I didn't have tomato paste, so I used a Bulgarian red pepper spread called Ajvar. It's red and chunky and actually has some eggplant in it. And don't be grossed out ... I squirted a little ketchup over it too to give it a tomatoey flavor. It really was good and I will have it for lunch tomorrow! Served it with rice, a green salad and biscuits.
