This recipe lived up to the ratings. I changed it up a little bit. First, I used half a can of light coconut milk in place of the heavy cream. Also, I omitted the jalepeno knowing younger eaters wouldn't like it spicy. I cooked the potatoes in the microwave first before adding to the pan. I used ground ginger instead of fresh minced. This would also be good with some chick peas and perhaps leaving out the crunchier bell peppers. My only complaint is that it is too labor intensive for a weeknight after work type meal.
