Garlic Cheese Chicken Rollups
You must try! I made these this week and they were delicious! I used recipe as a base recipe only and then modified to my liking. I pounded 2 boneless skinless chicken breasts between 2 pieces of wax paper til they were nice and thin. I then marinated them in ranch, basil, italian seasoning, pinch of cayanne, and a bit of olive oil for a few hours. I used melted butter to make the mix of bread crumbs and cracker crumbs stick to one side of each breast. Then I chopped garlic, jalapenos, and peanuts. I mixed these with sour cream, a pinch of cayanne, oregano, italian seasoning, and italian herb philly cooking cream. I spooned the filling into each breast and rolled up, securing with toothpicks. I put into a shallow baking dish and I used the remaining melted butter on top of each chicken roll, then added more crumbs. Baked at 350 degrees for 45 minutes. They came out perfect and crispy. My boyfriend loved them. I forgot the cheese but they still were fantastic. Quick and easy to prepare. Will definitely make again.

Rice Balls a la Tim
Made these for my boyfriend and parents yesterday and received great feedback. I used ground turkey and mixed in oregano, italian seasoning, basil, thyme, minced jalapenos, chopped garlic, chopped onion, and a pinch of chili seasoning to the cooked meat. Then mixed in a combination of brown and white rice, mozzarella cheese, parmesean cheese, and a garlic herb pasta sauce . I had no problem forming the balls. I let them cool in the fridge for a half an hour before coating in the egg and bread crumbs. I was able to form around 26 good sized balls out of the 1 1/4 lbs of turkey meat I had. Served with sauce, garlic bread, and a bit of rigatoni pasta. Plenty of left overs. Delish.

Incredibly Cheesy Turkey Meatloaf
I made this for my boyfriend and parents and they were "very impressed" with how delicious it was. Now my mom is asking for the recipe. Definitely use shredded cheese over cubed. Being of puerto rican decent I am big on spices. I added fresh chopped garlic, onion powder, dash of worcestshire sauce, touch of cayanne pepper, italian seasoning, basil, garlic powder, and oregano. Then I mixed ketchup and BBQ sauce to throw over the top of it. It was the best meal I've made to date. Thank you for this recipe!!
