Canned Apple Pie Filling

This is a great way to use up extra (and non-extra) apples. I found that 6 1/4 lb. apples and 1 1/4 recipes of the syrup filled my 7 quart jars...I may have needed the extra syrup because I left it simmering the whole time I was preparing the apples. I used Jonathan apples and did not peel them, which cut down on prep time. I also used just slightly more spice than the recipe calls for; you can always add more when you go to make the actual pie. Also, when packing the jars, I found it easier to do layers of apples & syrup, rather than adding all the syrup at the end...it was too thick to seep down the sides without leaving big air pockets.

Jam Filled Butter Cookies

Wonderful cookies...I'm adding this to my recipe box for sure. We used three different kinds of jam, and each one was delicious. Just beware - those little things are addictive - before you know it, you'll have munched away a 1/4 cup of butter all by yourself...

Iced Pumpkin Cookies

In a word: delicious. The cookies spread out more than I expected them to while baking, and also make sure that you grease the cookie sheet(s). I added 1/4 t ginger and 1 c chocolate chips, and will be adding this to my permanant file.

To Die For Blueberry Muffins

The fluffy texture & moistness of these muffins was really great...but I thought the flavor was lacking something important, maybe vanilla. The muffin itself seemed a bit bland while the topping was way too sweet for my tastes. My husband raved about these, though, and given everyone else's reviews I think it's just a matter of preference.

Raspberry Lemon Muffins

Really, really nice...not necessarily over-the-top amazing, but really nice. I love having the raspberries in them...it's an extremely nice shift from the usual blueberries. Sprinkling some sugar on top makes them brown nicely. The batter is really, really thick - similar to cookie dough - but the finished product is just fine...be careful not to overmix. I didn't use lemon extract, but I think it would really make a huge difference (positively) in the overall flavor & maybe add an extra star or two to my rating.

Mexican Bean Pie

You could probably assemble this dish in your sleep, which is a big plus. The flavors were alright and it was filling and inexpensive...but I thought the spices could use some doctoring-up (pretty cumin-heavy and just not as complex as I would have liked). It would probably work well to go with the earlier reviewer's suggestion for using taco seasoning. I'd also bake it for less than 20 minutes next time so that the top tortilla & cheese doesn't get crusty, but stays soft & gooey. The addition of salsa in the filling mix would also give it the moistness that it lacks.

Chocolate Zucchini Bread I

Pretty darn good...the taste is better on the 2nd day, too. I didn't get as much of a rise out of it as I am used to getting from other quick breads, so the texture is a bit dense. I might mess around with leaveners next time to give it some more openness. Be careful when testing for doneness...if you hit a chocolate chip, you'll think it needs more time when it might not. Thanks for the great recipe...this is a perfect way to use up zucchini & get a nice chocolate fix at the same time.

Baked Ziti I

Truly delicious. I was a little skeptical about the lack of extra seasonings, but the dish really doesn't need it. I accidentally only used one jar of pasta sauce, but the consistency was perfect for our tastes in the end. Thanks for a new family classic!

Banana Sour Cream Bread

This is really fantastic stuff...definitely a new family classic. It isn't overly sweet (although I didn't dust the pan with cinnamon sugar), which is a big plus, and it's moist but still holds together quite well. I also baked a 1/2 recipe in a bundt pan for 1 hour and 20 minutes...it was perfect. Great for snacking or warmed up with a dab of vanilla ice cream.

Sausage Smothered in Red Cabbage

I've never had saurkraut before & didn't really know what to expect, but it turned out well. The sausage flavor blends in with the rest of the dish, which is really nice. We also had it with mashed potatoes, which was perfect. Definitely a good one for the saurkraut lover(s) in the family.

Almond Mandarin Salad

What a wonderful salad! I'm not a fan of mustard, so I substituted the Asian Ginger Dressing (also on this web site), and it was so delicious. I might try using romaine or something sturdier next time so that the greens don't get soggy too quickly. I also chopped up the mandarin oranges a little so that they were distributed a little more throughout the salad.

This is exactly what I was looking for, and it tasted fantastic on the Almond Mandarin Salad also on this web site. I did substitute half the olive oil for sesame oil & left out the water, which I think made a really big (and positive) difference.

Garlic Butter Sauce I

Fantastic leaping-off point for a huge range of possibilities. For a single (large) serving of pasta, I halved the butter, about tripled the garlic, left out the oregano, kept the basil, and added a little black pepper. I'm sure I'll make it again, too.

Quinoa and Black Beans

This one's a winner - definitely a permanant addition to my recipe box. Do halve the beans - and yes, this is a wonderful burrito filling, especially with some melted monterey jack cheese. Make enough for leftovers, as it's better the 2nd and 3rd days.

Cinnamon and Lime Chicken Fajitas

I was really curious about this recipe but had no potatoes or jalapeno peppers, so I tried it without potatoes and with diced green chiles...it was a nice dinner, but definitely missing depth and body without those peppers and potatoes. I plan to try it again - with the correct ingredients!

Ginger Veggie Stir-Fry

Wow. This one is such a keeper. I didn't have any of the fresh veggies listed, so I used frozen carrots, broccoli, and cauliflower - plus I added some chicken. I am in love with ginger, and this definitely satisfies the craving for it. THANK YOU!

Addictive Sweet Potato Burritos

Good stuff! I quartered the recipe and still got six burritos - although I did use smaller tortillas. I thought the flavor was missing that extra "something," but regardless of that, it's a yummy, satisfying meal - definitely a keeper.
