Beer Lime Grilled Chicken

I made this, using frozen skinless boneless chicken thighs. I forgot to put honey in and I also added a chopped jalapeno. I heated up the marinade in the microwave and poured it over the meat, then stuck it in a Ziploc bag. After it thawed, I put in the fridge for a couple of hours. It came out delicious on the grill.

Mom's Prune Cake

Except for substituting margarine for the shortening,I made the cake exactly as my mother's recipe called for and it turned out perfect. It stays moist and the flavor gets better the second and third day. (If it lasts that long)!

Refried Beans Without the Refry

I tried this recipe, using less salt. It was fair, but lacked flavor, and really couldn't "stand on its own." Next time I will use some fat in the recipe.

Outrageous Warm Chicken Nacho Dip

I made this yesterday for Super Bowl and I will make it again. It's so easy to make, everyone loves it, and the chicken & black beans add to the overall nutruitional value.

Roasted Rosemary Cauliflower

I don't see what is so wonderful about this dish. It was a more healthy way to eat cauliflower than steaming it and pouring cheese sauce over it, but it just didn't taste that good to me.

Slow Cooker Sausage with Sauce

I boiled the sausages on a skillet for 15 minutes, then sliced them. I used 2 jars of spaghetti sauce, 1 red and 1 green pepper, and 2 onions, sliced. Also, added 6 cloves of garlic and some dried oregano and basil. It's a really great recipe for a Sunday to serve over mashed potatoes, with some parmeson sprinkled on top. Wonderful the next day to eat any way you want. I recommend this recipe!

Slow Cooker Cilantro Lime Chicken

Great recipe, full of flavor and low in fat. I used "Del Real" Guacatillo Salsa, sold at Costco in Calif. It's a green salsa,made from tomatillos, avocado, etc. There's something about adding the taco seasoning, lime juice, and cilantro that makes the sauce just "pop" with flavor. The chicken turned out moist, flavorful and easy to shred. I will make this agin, maybe next time with skinless chicken thighs.

Cheddar Spirals

I made this to go along with a barbeque we had today. It was so easy and so good! I used extra-sharp cheddar, and followed the recipe exactly. I will make this again! (Warning: after 2.5 hours, when you take off the lid to stir it, you will want to sample it. That's when you can't stop sampling it because it's so creamy and delicious).

Slow-Cooker Barbecue Ribs

I've used this technique twice, always roasting the ribs first to render off a little of the fat. This last time, I mixed up whatever bbq sauce I had on hand, added a little bit of bourbon to it, and let the ribs slow-cook. I feel confident cooking other ribs this way and will transfer them to the oven for one last "glazing bake" before serving.

Buffalo Chicken Dip

This was ok, but I didn't care for the texture. It was mushy. Maybe that's because I put the cooked chicken and sauce into the food processor a little too long, and the result was mushy meat. After that, even with all the other ingredients, it just wasn't all that appetizing. Be careful when you make this and don't do what I did.

World's Best Lasagna

I made this yesterday for a crowd we had over to play music. Everybody loved it. It was juicy and tender and flavorful. I served it with hot french rolls and butter. I will keep this recipe in my files and make it again!
