Chewy Coconut Cookies

Delicious cookies that got great reviews when fresh out of the oven. However, I suggest storing them in an airtight container as soon as they have cooled. I left them out overnight and the next morning they were equally delicious Crunchy Coconut Cookies.

Big Soft Ginger Cookies

Very yummy! I made about 12 per pan, and my plate of cookies was always almost all gobbled up before the next one came out of the oven! Great, soft, chewy cookies.

Cola Pork Chops

Very good! I followed a few of the tips of other reviewers, using half ketchup, half BBQ sauce, and I also added in some tabasco and garlic powder. Before putting them in the oven, I dredged the chops in lightly seasoned flour and fried them in olive oil to get a little caramelization and so the flour could thicken the sauce a little. They were very good. I used the extra sauce with added oregano on some pasta and served it as a side dish.

Gingerbread I

Like other reviewers have stated, I found this gingerbread a little dry. However, after I doubled all the spices and added cloves and the result was delicious. I made the cake in a bundt pan, dusted it with icing sugar and took it to a New Year's party. It was a hit! I will make this cake again, but maybe with a bit more molasses.

Banana Chip Muffins II

I didn't have applesauce, so I just used more mashed bananas. The muffins were delicious and I love that they are low in fat. One problem about no fat, though... they do not do well in paper muffin cups. In fact, about a third of the muffin was left behind. Too bad, because they taste great! Next time, I will butter all my muffin tins instead.

Strawberry Muffins

Very tasty! I brought these muffins to work and everyone loved them. They taste like strawberry shortcake. I think that next time I will use even more strawberries, though. Also, there is plenty of batter for 12 medium muffins. Simple and delish!

Focaccia Bread

I'm not a fan of parmesan cheese, so I left it off. I also played around a bit with the herbs, adding rosemary and oregano. The first time I made this, I found that the oil made the lower crust too crunchy, so this time, after greasing the pan, I sprinkled on garlic powder and dried basil. It made a nice layer between the bread and the pan, and added to the taste. It's sinmply scrumptious dipped into olive oil and balsamic vinegar!

Burger or Hot Dog Buns

I forgot to add the egg at the right moment. I only remembered after I's already been kneading for a few minutes. I wasn't sure what to do, so I just added the egg to the dough and kneaded a bit more. I needed some extra flour on the board and my hands, but the buns turned out wonderfully! This is a super recipe. (I gave the buns an egg wash and added a sprinkling of sesame seeds with great results.)
