Pumpkin Gingerbread

Great recipe! I did not have all the spices on hand so I used 4 tsp of pumpkin pie spice plus 1 tsp of ground ginger and it had great flavor. Also, to save on fat I replaced the oil with 1 cup of unsweetened applesauce. I got 3 small, about 8x4, loaves and split the batter up so one was plain, one has raisins and one has chocolate chips, yum!

Applesauce Bars

This was delicious! I added raisins, might try some walnuts next time too. I had to make two batches of icing to cover the whole 9x13 pan, and it needed a little extra milk to make it easy to spread. Just wish there was a way to make it a little healthier, with less butter.

Catherine's Spicy Chicken Soup

This was awesome! I cut the recipe in half, but used the full amount of salsa and tomato soup. I ended up adding all the cooking liquid back in, it seemed to need it. I agree with other reviews that this does not need the whole peeled tomato. I used diced tomato w/ green chiles and frozen corn b/c that is what I had. Even cut in half this makes a lot of soup.

Moroccan Tagine

Great, easy dish! I purchased precut squash to save time, and cut it into smaller pieces. Did not have any coriander so I added dried cilantro, along with a bit of cinn and nutmeg. Threw in a handful of golden raisins and a couple tbsp of flour at the very end to thicken. Served over couscous.**ABOUT TO MAKE THIS AGAIN BUT WANTED TO TRY IT IN A SLOW COOKER. ANY IDEAS ON HOW TO PREPARE?

Pecan Pie Bars I

AMAZING! I just made these for Thanksgiving and they are great! I cut the recipe in half, used a 13x9 glass baking dish, and kept the temperature and baking time the same. I also used only butter and used half white sugar and half light brown sugar for the pecan topping. Already cut them up for the holiday, but left the crispy edges for snacking before!
