Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Don't laugh...I totally cheated on this one because I was trying to appease my 6 year old! I used fish sticks instead of preparing the fish. (I thought I could convince her she would like it if she understood it was made with something she already liked) It worked!

Raspberry Pain au Chocolat (Raspberry Chocolate Croissants)

Outstanding! In order to prevent the jam from seeping out during cooking, heat it in a saucepan and add cornstarch. Once the jam cools completely (very important!) it will have a much thicker consistency and won't seep out while baking. The first batch I made I rolled out too thin which presented 2 issues...the pastry didn't puff much while cooking & the dough was very fragile since it was so thin. They still tasted great! I made mine more "bite sized" so I sliced the pieces smaller. Second batch was awesome!!

Easy OREO Truffles

Who knew something could look so elegant and only consist of a few ingredients?! These are VERY rich but wonderful for gift giving. I made them and put them in "Girls Night Out" martini glasses and gave them as Christmas gifts to my girlfriends. I agree with another reviewer who said these are better than the cake balls that are so popular.

Southern Praline Pecan Cake

Wow...I'll just echo what everyone else has said. This is WONDERFUL. The hardest part (I think) is finding Butter Pecan cake mix!! I can only find one store that carries it! Cake is moist, full of flavor and always receives rave reviews! I'm getting ready to make a couple to give as gifts.

Hawaiian Punch Slush for Adults

I saw that several reviewers commented on what to do about the chunks from the cream of coconut...I had the same problem so I just tossed it in the blender to get rid of them and it worked great! I used coconut vodka. I also thought the drink was a little on the sweet side so I added tonic water instead of Sprite. I also added some Malibu as well!! YUM!! Reviewers are correct...it makes a HUGE portion!!

White Chocolate Fruit Tart

Made for an Easter dinner potluck with slight variation; instead of preparing as a large tart, I made individual by using mini phyllo shells (yes, I know...I'm not a purist!!). I kept everything else the same. It was GREAT!! Folks kept coming up just raving about them and asking lots of questions about the filling! Other reviewers are correct...arranging the fruit does take the most time so plan for that. I added a little orange extract to the glaze just to enhance flavor. Very versatile recipe!! I am planning to make again today and use in cream puff shells!

Rice with Black Beans

Great recipe using pantry staples for me! I modified slightly by adding cumin & chili powder and Ro-Tel instead of regular canned tomoatoes to give it a little kick. I also sprinkled some cheese on top since it wasn't the most appealing in appearance!! Great flavor!!

Totally Groovy Chocolate Fondue

First time I made this, it was great. Second time I didn't refer to the recipe until I started having issues!! The extra cream is essential!! If you melt your chocolate and it appears grainy or the texture isn't smooth, add more cream & liquer (I used Bailey's) and whisk. It will smooth out and be great!!

Pork Chops to Live For

Really good w/ slight modifications. I added some onion soup mix to the mush soup for some extra flavor. I also added Tiger Sauce to give it a little kick..thought it was a little bland initially. End result was great! I used boneless chops and the did not require anywhere near the amount of time suggested for cooking. Even my picky hubby who doesn't like anything new had 3 helpings!

Sweet 'N' Sour Pork Chops

Not a keeper for me. I prepared according to directions except for the fact the sauce wouldn't thicken so I added more cornstarch. It became a gloopy, gelatinous mess and the flavor was not good either.

Strawberry Torte

WOW!! I've made this several times and always receive rave reviews on it. I do change slightly based on feedback from other reviewers..it's a very "forgiving" recipe though. I mash the frozen berries with a masher and cook them w/ the cornstarch. I also tore up the ladyfingers in small pieces to cover the bottom of the pan. I was afraid the filling would seep through otherwise.

Kielbasa and Cabbage

Fab recipe!! I substituted for the onion with minced onion flakes since I don't like onions. I've also used both Splenda and sugar with equal results. I do cut back on the sugar b/c it tends to be OVERLY sweet with the full amount.

Chocolate Velvet Ice Cream

WOW!! How can you not say great things about this recipe?! I wone first prize at a "churn off" at the hospital I work at during our annual employee picnic. I veered from the recipe a bit based on other feedback. I, too, used egg beaters. I also combined it all the ingredients in the blender to mix them. I used Baker's semi-sweet chocolate and grated 1 square using a microplane grater...made the chocolate very fine and incorporated it wonderfully! I then added the grated chocolate to the other ingredients. The end result was just like chocolate velvet....smooth & creamy!!

Coconut Ice Cream

GREAT recipe!! I modified slightly from the recipe based on other comments. I mixed it all in the blender (including the coconut). When the churn stopped, I added some crushed pineapple and started the churn back up to incorporate it. I also added some blue food coloring to make it a "Blue Hawaiian"!

Bread Pudding II

Great bread pudding!! I made a few slight changes...I used half cream & half milk, crossaints instead of french bread and increased the amount of bread significantly. I didn't have nuts so I just topped with brown sugar, cinnamon & nutmeg. I also made the brown sugar sauce from this site and served the bread pudding with it. WONDERFUL!!
