Chicken Penne with Asparagus, Sun-dried Tomatoes, and Artichoke Hearts

Reviewed: Nov. 18, 2010
This was so good, I can't wait to make it again. I used cut chicken breast instead of the shredded.

Thanksgiving Meatloaf

Reviewed: Dec. 31, 2011
This was delicious! I didn't have poultry seasoning (and couldn't find it), so I substituted some chicken bouillon. I also substituted Parmesan cheese for the Romano, because it has a similar flavor to Romano and I already had some. Everyone loved it!

Cabbage Rolls III

Reviewed: Mar. 8, 2011
Delicious! I will be making this again and again. The only recommendation I have is to soften the cabbage before trying to take the leaves off the head. Otherwise they break. I put it in the microwave, in a bowl of shallow water. Approx. 2 minutes per 2 leaves removed.

Spinach Lentil Soup

Reviewed: Nov. 9, 2010
This was so easy to make and delicious! I had people asking me for the recipe. I used medium salsa to give it a kick. Yummy!

Black Bean Chili

Reviewed: Nov. 9, 2010
I had only given this 4 stars before, but after making it a second time, I had to change my rating to 5 stars. This time around, I started the onions before the other ingredients, so they were thoroughly cooked. Then, while the onions were cooking, I chopped and added the remaining veggies in order. After adding the corn, I let it simmer for 10 minutes. Everything cooked perfectly. I also added more tomato. Unless you can find big plum tomatoes, I recommend using more than 6. Delicious!

Sausage Stuffed Jalapenos

Reviewed: Dec. 31, 2011
This stuffing mix is so good that I've had multiple people ask me for the recipe. It works in all types of peppers (try banana peppers for a nice kick), as well as mushrooms.

Donut Muffins

Reviewed: Dec. 30, 2010
I was disappointed with these muffins. But, I didn't have mini muffin pans, so I made regular sized muffins. Maybe it's better with the minis.

Home-Style Scalloped Potatoes

Reviewed: Dec. 30, 2010
Easy recipe. Came out pretty well, but I thought it was a little bland.

Cherry-Blueberry Pie

Reviewed: Dec. 1, 2010
I'm really not sure why this recipe has such great reviews. My husband and I agreed that the filling was just okay. We were both disappointed.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Mar. 8, 2011
This was good, but next time I'll use less pasta. There wasn't enough sauce for my liking. And, the sauce itself was a little bland. The sausage added all the flavor.

Artichoke Chicken

Reviewed: Mar. 8, 2011
So good. I actually only used 2 chicken breast halves, so there would be extra artichoke sauce to put over rice. My husband said this is the best thing I've ever made.

Breakfast Loaf

Reviewed: Dec. 30, 2010
Delicious and easy! All I could find was brioche which got a little too hard when baked. But, my husband and I still loved it.

Bread Pudding III

Reviewed: Dec. 30, 2010
This was so easy to make and came out better than expected. My 2 quart casserole was being used for something else, so I used a cake pan. I'm making a second batch tonight!

Chicken and Apple Curry

Reviewed: Nov. 9, 2010
I would give this three stars, but my husband loved it, so I compromised with four stars. I used two tablespoons of curry and was still disappointed that it didn't have more curry flavor. I found it a little bland. I'll try it again with a few modifications. I also used cut up turkey, to make it easier to eat over some cous cous.

Artichoke Stuffed Mushrooms

Reviewed: Dec. 31, 2011
I enjoyed this recipe, but it didn't have that wow factor for me. I did end up with a lot of left over stuffing, so buy extra mushrooms. I didn't make any adjustments to the recipe.
