This recipe is awesome! I made it exactly as the recipe states, then I made it a few more times, making changes to make it healthier. Check out Debbie S' review for some great ideas. I tried: 1/2 cup brown sugar, 3/4 cup chunky applesauce instead of butter (this substitution works great and makes it taste even better!), raisins, walnuts, and whatever fruit I have on hand (chopped apples, cranberries, blueberries, etc.). I like my baked oatmeal "chunky" (lots of fruit in it), but with these modifications, it will hold together well. I bake it at night and pop it in the fridge. Then I slice it and eat it on-the-go with a cup of coffee.
