Chocolate Pinwheel Cookies

Requires patience. They are in the oven now and look just like the picture. I used a rolling mat to roll out the best rectangle I could. Then I flipped it onto a 8x13 pan. I did the same with the second ball of dough and flipped it onto the other. I trimmed the edges square and rolled it up longways in the pan. I did double the recipe and ended up with 45 cookies.

Cranberry Salad

Pleasantly suprised! I honestly didn't know you could eat cranberries raw. I used my Pampered Chef chopper to chop the cranberries and apples fine. I made this recipe in steps. I made the berries and sugar on Tues (accidentally used 1- 1/2c sugar), added the apples on Wed and mixed the salad together before Thanksgiving dinner on Thur. I did end up straining some of the liquid so it wouldn't turn too pink before adding the cool whip. I don't care for marshmallows but this salad was really good. I used Chobani vanilla yogurt, not too sweet. I was worried that the small amout of leftovers wouldn't save but it was great the next day too. It didn't get watery.

Pumpkin Cookies II

I would describe the texture as that of a fluffy pancake. I doubled the spices as recommended and am glad I did, they are not very sweet. The nuts and raisins were omitted due to allergies but I think they would have added a lot. I sprinkled the hot cookies with cinnamon/sugar mixture. I didn't have quite enough shortening so I used a small cup of diced pears, drained (I was out of applesauce.) It didn't affect the recipe. The batter wasn't at all watery. I made them for book club and everyone loved them and my boys loved them. I thought they were ok. I'm looking forward to trying them again tomorrow with coffee.
