Mini Pumpkin Butterscotch Muffins

I am not a baker so anytime I bake something, it's a shoot. However, I was so pleased that these turned out so great. I baked 5 dozen for my son's bday party and all the kids [and mommies] loved them!! What I'd like to do moving forward tho is figure out how to get the chips on top - so cute. Mine were all in the muffin. No one cared and they were gone in three hours!

Amazing Pork Tenderloin in the Slow Cooker

I love this recipe. Top reason is simplicity. The short list of ingredients and no prep is key for me with a toddler around! And yes, it tastes good! I end up doubling it due to the pork loin packs we get at Costco. I also skip the garlic - not because we don't like it but because we use it too much. On day two, I keep some meat to the side and the rest I shred to either add BBQ sauce for pulled pork sandwiches or soak in the sauce and use for pulled pork quesadillas/burritos.

Broccoli Chicken Roli

I wasn't sure about this recipe but ended up really liking it. We haven't had crescent rolls in ages and it was such a treat. There is quite a bit of stuffing. Could have used less, but I ended up filling each roll quite full. It worked. They also made nice little meals for our toddler.

Slow Cooker Stuffing

Wow - this was great. So nice not to have something else to put in the oven during Thanksgiving preparations. I watched the amount of broth to be sure it wasn't too soupy even though I do prefer my stuffing moist. Also used half fresh bread and half bagged stuffing. Definitely making this again.

Lucky New Year's Black-Eyed Pea Stew

We really enjoyed this. I made it in the crockpot so we could leave for the day. Sauteed onions first obviously. We used chorizo instead of ham and used more cabbage. Forgot to make rice and liked it soupy. Did serve with quinoa second time around. Was also able to freeze what was left.

Asparagus, Chicken, and Pecan Pasta

We liked it as did our toddler. I would like to get a little more flavor in it. I used pecorino instead because we had it and omitted the butter. Nice to get a veggie serving in with the pasta. Overall, I'd give it another try.

Ham N Egg Skillet
