Nice, moist chicken. Mine took longer to cook than stated in the directions. Substituted dried cranberries for the raisins in the stuffing (knew the kids would turn their noses up at the raisins) and everyone like it.

Chocolate Date Loaf II

Easter Breakfast Casserole

I was unsure whether or not the bacon was to be raw or cooked, so I partially cooked it. Next time I will use fully cooked bacon because it was a bit greasy. It was still very good and the leftovers disappeared the next day.

Pico de Gallo Chicken Quesadillas

Fast, healthy, flavorful. I used the smaller flour tortillas and was able to turn them over easily. Also, the smaller size seemed to be a perfect portion for one person. The recipe served four this way. Used precooked chicken and added it to the onion/pepper mixture at the end just enough to heat.

David's Secret Ingredient Chocolate Chip Cookies

These cookies are good and always disappear fast. I regularly use this recipe to get rid of old breakfast cereal. I have used every cereal you can image as a substitution for the rice krispies. Also, I have always just crushed the cereal rather than put it in the blender.

Creamy Frosting

This recipe whipped together just fine (make sure the milk and flour mixture cools completely), but it is extremely rich, very buttery, and might be best suited for a cake kept in the refrigerator.
