Bacon Omelette Roll with Salsa

I sauteed my veggies so when I went to roll it, it did not roll. I scooped it up and put it in a dish to have a serving in the mornings as breakfast. It tastes good but does not look good since it did not roll. The only reason I can think of is because of the cooked veggies adding more liquid. May try again sometime with raw veggies.

Blackberry Cobbler

I only made 1/2 the recipe and used 1/2 flour and 1/2 wheat flour; 1/2 sugar and 1/2 splenda; didn't have blackberries so I used strawberries and blueberries instead. The edges turned out tough but the center was ooygooy goodness! I bet I over baked causing the tough edge.

Baked Ziti I

Great with a few tweaks. Made homemade sauce, omitted the extra onion. Layered as follows: couple scoops sauce in base of pan, 1/2 noodles, 1/2 sauce, sour cream, provelone, little sauce, rest noodles, rest sauce, parmesan, mozzarella. It's amazing this way; the other way is not as good the cheese acts as a barrier for the sauce, this way the sauce soaks into the noodles and makes it great!

Chunky Marinara Sauce

With some tweaks this is awesome sauce. I used 1/2 an onion; crushed rather than diced tomatoes; added fresh chopped basil to taste (for me I like a lot); 1 red bell pepper finely chopped and sauteed with garlic and onion.

Favorite Banana Blueberry Quick Bread

Awesome bread, it was my first time making bread. I used 1 cup frozen blue berries instead of fresh, 1/2 cup applesauce instead of shortening, omitted the pecans, used 1/2 cup wheat flour and 1 cup ap flour, used 1/2 cup splenda and 1/2 cup sugar. Just wonderful and tastes healthy, and I know it is to a certain degree! Hubby loved it too!
