Restaurant Style Egg Drop Soup

Good if a bit bland for my tastes. I didn't have chives but I added fresh ginger, garlic, a dash of Chinese 5-spice, soy sauce and oyster sauce and subbed onion for chives as I didn't have any. I also garnished with baby bok choy and fresh cilantro, and added a bit of sriracha. It became more of a meal after I added udon noodles I cooked in a separate pan.

Quick Asian Beef Noodle Soup

I modified this a lot to be healthier and fresher. First, I didn't use ramen - I used udon noodles (cooked first, then added to finished broth at the end). I made the broth by using chicken stock, fresh minced garlic AND ginger, soy sauce, oyster sauce and stirfrying the onion in sesame oil. I used leftover cooked ground turkey I had on hand. I also added mushrooms. After dishing up the broth and noodles I added the bok choy (it just wilts a bit, doesn't cook to death), and garnished with some chopped green onion, cilantro and lime. Add sriracha or other hot sauce for added effect. It was simple, pretty easy and still a great dinner!

Vegan Agave Cornbread Muffins

I subbed pumpkin for the applesauce, brown sugar for the agave nectar (didn't have any) and added cranberries. An awesome way to make healthy, vegan holiday muffins!

Excellent and Healthy Cornbread

Great use of almost-expired yogurt and leftover pumpkin. I customized by adding two tbs of olive oil, pumpkin puree (in place of an egg and a half cup of yogurt, I made a triple batch), vanilla extract and pumpkin pie spice and in one batch I added pomegranate seeds and in the other I added cranberries and walnuts! Good stuff.

Brown Rice Breakfast Porridge

Perfect for a bunch of leftover brown rice I had! Dressed it up by trading cranberries for the blueberries, adding nutmeg, and garnishing with pomegranate seeds (also leftover from last night) and toasted walnuts. I might try it with orange zest, ginger and cranberries next time!
