Chicken Cordon Bleu II

We've made a similar version of this recipe for years except for instead of rolling the chicken in flour substitue corn starch. You'll be amazed at how much crunchier it gets. Also doesn't get "gummy" like it does with flour. We also cook our fish with corn starch instead of flour.

A Pad Thai Worth Making

This is the best Pad Thai recipe I've ever tasted! I didn't have shrimp so just used chicken and added a bit of tamarind paste, other then that followed recipe to the tee! I now make a double batch cause there's never any leftovers!

Easy Meatloaf

By far the best meatloaf recipe I've ever had! Love, love, loved it! I doubled up the "sauce" and made lots of garlic mashed potatoes to accompany it. I actually went through my recipe box and threw out all my other meatloaf recipes. This is the one!

Rhubarb Marmalade

Used my big ole cast iron skillet, didn't cut the sugar, reached my "jel" point in less then an hour. Turned out amazing, needless to say this one's going in the ole recipe box!

Chicken Yakisoba

This was so good! The first time I pretty much followed the recipe with exception to the salt and I thought is was a little too salty so the next time I used low sodium soy sauce. Perfect! You can through any kind of veggie in there, they all work. I also warmed the noodles up in the microwave before tossing them in. Good stuff, this recipes going into my recipe box!

Sausage and Bean Ragout

Love, love, love this dish! Used beef broth instead of the chicken, also didn't have hot sausage so used mild with red pepper flakes, used the ground beef as well as sausage and kale in place of spinach. Previous reviewer was spot on, the kale stands up well, makes you feel like you're chewing on something substantial. This is going into my "keeper" file!
