Boneless Buffalo Wings

Reviewed: Sep. 12, 2013
These were soooo good! We doubled the flour (and spices) and used 3 eggs as we had huge chicken breasts- I'm sure that part will vary. We debated whether the author means double dipping both the egg and flour, but after rereading the directions, decided that is how it's read- so we did that, and wow! That coating was not coming off and it was delicious. For the sauce we used 1/4 Tabasco and 1/4 cup of Pico/Pica Hot Sauce with a little more than 2T butter- yummy! For dipping sauce we used a blue cheese vinaigrette I accidentally purchased and it was really good. Regular blue cheese would be great and I gave my son ranch dressing. We will make this again :)

Slow Cooker Taco Soup

Reviewed: Nov. 24, 2010
We really liked this and I'll make it again. I didn't have a taco packet so I used a chili packet instead- with a little added taco seasoning I had. I used 1 can of black beans, and 1 can of white beans as we don't care for either bean it called for. I used fire roasted diced tomatoes- and that was delish! Topped it with sour cream and grated cheese- yummy! I served it with whole wheat, grilled, tortilla 'n cheese.

Easy Tuna Casserole

Reviewed: Nov. 24, 2010
My family liked this- I was surprised as I don't usually make casseroles- I grew up on them, so they're not my favorite! I think it needed to be creamier and I'll adjust it next time.

Cocktail Meatballs

Reviewed: Nov. 24, 2010
These were a hit with my family. I did use 2lbs. of hamburger as other reviewers said they didn't go far. I didn't like the chili sauce I used- Heinz- and need to try something else. It was not hot as others had said (probably because of the sauce I chose to use), so I added Sriracha Hot Sauce and this really made the dish!
