Tarragon Tuna Salad

This is a very good tuna salad. I serve mine on open faced sandwiches. Cut a chewy roll such as ciabatta in half and toast. Put tuna salad on each half, top with a slice of tomato and then a slice of provolone cheese. Broil under the broiler a few minutes until the cheese is slightly browned and bubbly.

The chocolate, coffee, and sugar are well balanced and give this recipe a rich and complex flavor. It could have been spicier for me, but my wife who doesn't like spicy foods liked it as is.

Becca's Bruschetta

Color and texture was very nice, taste good but not great. Also, this made the bread soggy in the middle. Might depend on how juicy your tomatoes are, but I'd recommend putting this mixture into a strainer to take a lot of the liquid out. Also might be a good idea to partially toast the bread before finishing it in the oven.

Scallop and Shrimp Kabobs

This recipe sounded good and the photo is nice, but I didn't care for it. Pineapple goes great with grilled pork, but I thought it was mismatched with scallops. Also, the sauce tasted pretty good in the bowl when I made it, but was lacking when put on the food. It needs more zip. This recipe looks better than it tastes.

Mojito

You can't beat a mojito for a summertime patio drink - it's crisp, light, and refreshing. I like mine with a whole lime and a 1 to 1 1/2 teaspoons sugar or splenda. Splenda tastes just as good and dissolves more easily than sugar. Also try a dash or two of bitters if you wish.

Hot Artichoke Spinach Dip

In the restaurant this is typically mostly spinach and hardly any artichoke due to the cost. This recipe is affordable and better than most restaurant versions.
