Black Bean and Couscous Salad

This couscous salad is absolutely delicious. I am a vegetarian so I substituted the chicken broth for vegetable stock and also used whole wheat couscous instead. I also cut out the olive oil all together and just increased the red wine vinegar and lemon juice instead. Love the cumin flavor - fantastic!

Mexican Bean Salad

I just made this bean salad and it is absolutely fantastic!!!! The dressing is what really makes it. Personally, I don't like too much olive oil so I used only 1/2 of what the recipe calls for (next time I may even use less...but that is my personal preference. I also but back the sugar 1 tbs. and was quite generous with the hot sauce (4 shakes of the bottle). I will probably use this dressing for regular salad as well. I can't wait to have a BBQ so I can make it for my family & friends!
