Cream Cheese Chicken

Reviewed: Feb. 1, 2004
It was extra work to pound the chicken breasts out but the end result was well worth it. I recommend backing off on the amount of mustard as it was a bit overpowering. Good recipe for a nice dinner at home or for guests. Thanks for sharing it!

Seasoned Turkey Burgers

Reviewed: Feb. 1, 2004
Quite good. We do not eat beef in our home, so these were a nice change in pace from chicken breasts!! The onion soup mix adds good flavor. I made some into burgers and some into small meatballs for the kids. I have used both the super-lean and "regular" ground turkey and found that the super-lean had a "cleaner" flavor.

Pineapple Chicken Tenders

Reviewed: Feb. 1, 2004
Enjoyed it very much. I have made it several times. The only time I put everything on skewers was the first time; since then I have broiled it in the oven usually with chunks of red peppers and onions in addition to the pineapple. It is delicious! Kids and adults in my home love it. I usually serve it with rice.

Excellent! A hit with kids and adults. My 3 yr old enjoyed helping make the chips. This recipe is very versatile...can use fresh or frozen fruit.

Chicken Danielle

very good. I used low fat condensed soups and cut the butter and cream amounts about in half. The wine gives it a very nice flavor. Thanks!

Black Bean Vegetable Soup

Reviewed: Sep. 21, 2002
This is delicious! It tasted good on a warm summer night and I can't wait to make it for winter meals. Recommend using less broth (2 1/2 to 3 cups) to make it thicker. It has a great texture and flavor! thanks for sharing the recipe!

Chicken Enchiladas II

Reviewed: Sep. 21, 2002
We really enjoy this recipe! Used a few tips from other reviewers (added 1/8 tsp chili powder, 1/4 tsp cumin, increased amount of fat free sour cream and also used fat free cream of mushroom soup). It is delicious! I have also put all of the filling into the tortillas (forgot to set some aside to put on top of the finished tortillas) and all of the cheese on top (instead of mixing some with the sauce) and it still tasted great! thanks for sharing this recipe!!

Wonderful Banana Cake

very moist. A good way to use ripe bananas if you're going to be making a cake anyway.

Spinach and Potato Frittata

Reviewed: Jul. 28, 2002
it has great potential! Good flavor. The potato slices were a little difficult to cut through. I think that next time I will buy hash brown potatoes (in the refrigerated section at the grocery store) to use instead of sliced red potatoes.

Seven Layer Tortilla Pie

Reviewed: May 30, 2002
It tasted very good and was quite filling. I don't know what we did wrong but we followed the recipe and had way too many tortillas and filling! We used a 9" springform pan and only needed 4 tortillas to make it to the top of the pan. I would make it again but with about half the amount of ingredients. It tasted great accompanied by guacamole!

Artichoke Spinach Lasagna

A taste of the Mediterranean! It is different from the same ol'-same ol' lasagna and very tasty! We have made it only one time so far and used alfredo sauce. Love the rosemary and feta flavors!
