Chicken Tagine

I loved this. The rest of my family was "eh." However, they're not very adventurous eaters, and since I'm the cook, I'm giving it 4 stars. I liked it enough to make again knowing I'm going to get complaints from everyone.

The Best Parmesan Chicken Bake

Fast, easy and good. This is not gourmet but it is a GREAT weeknight meal when you need to feed everyone quickly. Breadcrumbs work as well as croutons. I often use cubed chicken which shortens the cooking time drastically.

Ninety Minute Cinnamon Rolls

Good if you like more of a buttery/pastry type cinnamon roll. I prefer gooey, more bread-like cinnamon rolls so was a but disappointed.

Chicken Tikka Masala

Even lightened up a bit (I went easy on the cream, and used light cream), this recipe is really, really good. I used homemade Garam Masala which I'm sure helped.

The first time I made this was for Diwali, with a family visiting from India (I am not Indian nor am i particularly familiar with Indian cooking). Stressful! I thought it was delicious and they seemed to like it, 4 stars.

Spicy Eggplant

Absolutely delicious! I'm not a huge eggplant fan, but I loved this. I added diced red peppers when I added the eggplant to the sauce mixture and fresh diced amaranth leaves (taste is very similar to spinach) and thai basil when I added the sesame oil to make the dish a little more aesthetically pleasing and because they were all ready in the garden along with the eggplants.

Mama's Asian Chicken and Rice

Very tasty midweek dinner. I wouldn't make this as a special meal but for a quick dinner, it's a crowd pleaser. I added several veggies and did not simmer as long as called for.

Caramel Coated Catfish

Absolutely fantastic. The catfish looked pretty iffy at the market so I substituted haddock. If I made it again I would decrease the pepper- I enjoyed the recipe as is but it had too much bite for my kids. This is a recipe I will definitely be making again!

Slow-Cooker Chicken Tortilla Soup

Fantastic recipe! We're trying to eat less meat so I used half the recommended amount of chicken and added a can of white beans. I also cooked the chicken breast in the soup and then shredded it. So good...this is going into the regular rotation.

Argentine Lentil Stew

I was skeptical of this right up until I took the first bite - I was certain it was going to be awful! I loved it, but my husband wasn't wowed...so the odd combination of ingredients does create a taste that's not for everyone. I added some chili pepper for a little more kick.
