Hi, I live in North Pole Alaska. I am a nurse and I love to cook good tasting healthy meals. I try to cut back on the bad fats and increase the good things, without compromising on taste. My husband doesn't like to eat a lot of veggies so one of my favorite thing to do is sneak vegetables in his diet. I am getting good at it!!
My favorite things to cook
I love soups and casseroles, lots of opportunities to get veggies into the diet!!!
My cooking triumphs
I think this last Thanks giving 2010 was a triumph. I brined the turkey (we are going to do that from now on) and made the Broccoli casserole. Everything was delicious.
My cooking tragedies
A few years ago my oven was broken. The temperature gage didn't work so I had to watch what was cooking very closely and turn the oven off and on myself. We had many family and friends over and I was cooking pie. I forgot about the pies, I remembered them when smoke literally came rolling out of the oven. We had to leave the house and open all the doors and windows. I still get teased about it.

Oh My God! These are great as is. I made one batch, then another and there were still no leftovers.

Baked Crab and Artichoke Dip
We made it with some left over king crab (I know, right!?). I loved the way all the flavors blended, added about 2T of hot jalapeno juice to add just the right amount of kick. It is just a bit bland, but hey you can always add spice, much more difficult to take it out. Good stuff!!

Smokey Clamicken Chowder
I have made this several times and I love it. Now I use it as a base for all different types of chowder. Tonight I am making Smoked Salmon Corn Chowder. I am adding corn and salmon in place of the chicken and clams - delish!!
