A Good Easy Garlic Chicken

Absolutely loved this!! Used 1/2 tsp sea salt instead of seasoning salt and it was great. As others suggested, I just browned both sides well in olive oil, removed from pan and made a gravy with a couple tsp. each of melted butter and flour and added 2 c. chicken stock. I then returned the chicken to the pan with gravy and simmered uncovered till done. Served over brown rice and veggies. Loved it, sooo flavorful, thanks.

Berry Cobbler

Excellent with fresh cranberries. Moist the next day. Serve with ice cream. Only used 3/4 cup sugar and sweetness was just right. Will try with blueberries next time.

Almost No Fat Banana Bread

LOVED THIS BREAD. Added 1 tsp vanilla, used 1 whole egg instead of two egg whites, two large ripe bananas, one of the single serving applesauce cups and a handful of chocolate chips. Only mix wet ingredients into the dry ingredients until blended. Do not over mix. I baked mine for 64 mins. in a glass loaf pan and it was perfect!! Thanks for the recipe!!

Cabbage Rolls II

These are the BEST cabbage rolls I've ever had!! Only changes were the salt and pepper - just sprinkled some on meat mixture to taste - and used 1/2 680 ml no name tin of tomato sauce (just over 8 oz.) for 1 recipe of sauce . The amount of meat mixture in this recipe are bang on for a large head of cabbage. I make two separate batches of meat mixture, use two large heads of cabbage. Pile up 1 recipe cabbage rolls in large slow cooker and cover with 1 sauce recipe then pile the 2nd recipe rolls over sauce and cover with another sauce recipe. Cook in slow cooker for 8 hrs on low. They turn out absolutely perfect. Freeze for a couple weeks for flavors to meld.

Jo's Rosemary Bread

Out of this world delicious!! Used fresh rosemary (snipped small measuring 1 tsp.). Used white all purpose flour. Warmed water to 110 degrees. All other ingredients exactly as written. Cooked fully in bread machine on "basic bake" cycle. I have an old Sanyo bread machine (The Bread Factory Plus). Turned out absolutely delicious!! First bread I really enjoyed from my bread machine... :)

Jamie's Cranberry Spinach Salad

Awesome..dry roasted sesame seeds and almonds separately using med. low heat in a fry pan (stirring constantly). No butter required. Used light tasting Olive Oil instead of vegetable. Added cooked shrimp as well. Would be great with grilled chicken I'm sure. Otherwise followed recipe exactly and it was excellent.

Chipotle Crusted Pork Tenderloin

THE BEST PORK TENDERLOIN I HAVE EVER TASTED!! I cut down on the Chipotle seasoning to 1/2 to 3/4 T. (Epicure)depending on how spicy you like it, dry meat with paper towel, brush lightly with Olive Oil, apply rub and let stand I cook it open in oven in a cast iron pot (450 deg.) for 40 mins. Let rest for 5 mins. Turns out PERFECT every time. YUMMMO!!

Brown Sugar Meatloaf

Truly great home cooking!! Adjusted ingredients only for the following: Used just under 1/2 c. brown sugar, just under 1/2 c. milk, no ginger, a sprinkle of onion powder and 1 tsp. dried minced onion instead of the onion and only 1 tsp. salt. Turned out really really really good!! It's a keeper, thank you.

Healthy Banana Cookies

Excellent cookies. I halved the recipe and added a handful of dried cranberries and 1/4 tsp cinnamon. Yummm. They are excellent right out of the oven. Next day, not so much. That's why I would recommend making only 1/2 the recipe.

Spicy Chipotle Turkey Burgers

Excellent burgers! I processed the whole can of chipotle chili in abodo sauce in my Magic Bullet and used 1 heaping T. in the meat. You can then put the rest of chili sauce in a ziplock and freeze for next time (per Rachael Ray - just cut out a piece when you need). I also made a chipotle mayo to go with which really kicked it up a notch (3T low fat mayo and 1 tsp chili sauce). With the sauce on both sides, the burger had just the right heat. Also used 2 lbs of turkey and the same amount of spices (plenty of flavor). Also only used 1 T. of dried Cilantro and 2 T. grated onion with juice instead of chopped. Cooked on indoor grill. Very yummy!
