OMG These were so good. I followed the recipe but add a few more vegetables like radishes, mushrooms, green peppers and some onions. Never thought I would like parsnips but everything came out so delicious and sweet even the radishes. This is a good way to get a variety of veg. and your veg. quota for the day. You can add a little more seasoning than called for if you wish. Probably just about any veg . will work as long as you start the firm ones first and add the softer veggies later. Thanks Lorelei--now I love to eat my vegetables. BTW-they are best at room tempeature .

Roasted Rack of Lamb

This is the easiest and best Rack of Lamb I ever prepared. I serve it as my signature dish for company. It is so simple to prepare and quick and yet it tastes like it took hours to prepare. The recipe is perfect just the way it is.

Chicken with Couscous

Watch out!!! Way too hot for my taste but hubby loved it. If it weren't for the peppers this would be a great dish. Next time I'll leave out the peppers and serve with rice.

Sausage Egg Casserole

I just made this casserole again for the 3rd time since Christmas. It was a big hit. My house guests kept asking for more. I've never made an egg/cheese dish that was this popular before. I will definetly make this often. It would also be good for dinner.

Magic Chicken

Irish Lamb Stew

Dan---you da man! This stew was fantastic. I served it for a St. Pattricks' Day dinner and it was a big hit. Very tasty indeed! This will go into "my favorites recipe" book.
