Homemade Black Bean Veggie Burgers

Made these tonight. The mushed beans make it seem a bit "doughy". Only the flavors of included were not enough for me. I added some mushrooms and roughly ground oatmeal, jalapenos, lemon salt, and crackers as I had no breadcrumbs. I just hated the texture, mushy and soft. NOT meaty texture.

Chunky Cheesecake Brownies

Loved these. Halved the recipe. Followed properly, and came out great. Used microwave instead of double boiler. And added 1 spoon dark cocoa. After a night in the fridge they taste a lot fudgier-if you're into that.

Homemade Flour Tortillas

-I added some frozen spinach, pepper, oregano, and garlic powder for a bit of difference to ordinary salad wraps. -I also subbed one of the cups of flour with whole wheat. -And used 2 TB butter not lard. -As soon as each one was done I immedietly threw it into a ziplock and sealed it shut. They stay very soft that way.

I guess it was just too hard for me? Brown sugar on bottom was too much--way to thick a coating. My alien chocolate chips did not melt--even with the oven door shut! Should have ground them up first. Better presentation. Mine did not look good. I'd like them, methinks, if I lowered the sugar, and chopped the chocolate.

Best Chocolate Chip Cookies

Good cookie, stayed soft for 3 days so far without getting all dry and crumby. Could be due to my change. For the white sugar, I used half white and half splenda. These cookies didn't get as brown and chewy as they would've without splenda. But still good as soft cookie. Also added some coffee, instant.

Lemon Poppy Seed Muffins II

1) Tried to make them eggless, more baking soda 2) Had no lemon yogurt, used 1/2 fat sour cream and cheap lemon flavor 3) No, lemon zest either 4) Had only a little bit of poppy seeds left, a sprinkle Gave this 4 stars because obviously messed this recipe a bit. And me and my eggless eating mother still thought they were good. Can only imagine if I had the proper lemon-iness and poppy seed amount.

Black Bean and Salsa Soup

Not only tasty but REALLY simple to make. Just dump four ingredients together! I sauted some jalapeno with extra cumin first though. Then added beans, broth, and salsa! No blending. Yummo!

Buttercream Icing

Made with all butter. Double vanilla. 2.5c sugar. 1TB milk. --My hot hands make the frosting "melty" but not so bad that I couldn't get "average" piped flowers. --Taste is not bad, I sortof like it. Less "buttery" though might have been better tasting. --Just wish it could stay out, fridging makes it bit more harder.

Pizza Crust Fantastico

Very soft crust, okay taste. I had to add more flour as dough was over-sticky. I think I prefer more crusty, chewy, unflavored crusts. But this was interesting to try! :)

Angela's Awesome Enchiladas

Changed stuff around a bit, but am reviewing this because the basics, that being soup and sour cream in this recipe really made for something different and delicious. Added some extra seasonings and beans instead of chicken (for vegetarians), still gooey, cheezy and yummy.

Condensed Milk Chocolate Frosting

I modified this recipe: I added maybe 1/2c of semi-sweet baking chips and no water. I also added peppermint extract and a bit of instant coffee powder as the chocolate flavor just wasn't coming thru. Mine got thick but still pourable when it cooled. I wonder if that is because of the baking chips...otherwise it might have been runnier. Maybe cooled in the fridge it would be frosting texture. But I liked this as a SUPER easy cake topping. No long beating, clouds of sugar, and worries it might melt like buttercream.

Cajun Chicken Pasta

Note:I made changes so take that into consideration with my rating. 1) Replaced Heavy cream with milk. 2)Used faux chicken :) 3)No green onion so 1 Tb regular used. -------------I had to amp up the seasonings and sprinkled some crushed pepper, thyme, & oregano. It was actually nice & creamy without all the heavy cream fat added. I think rosemary & fresh garlic would be good too. Next time I might use 1/2c less milk, try a "drier" pasta. Pretty quick to make.

Chocolate Muffins

Changed some things, so take that into consideration with my rating. 1)Replaced 2/3c wheat flour. 2)Reduced 1/2c sugar & added stevia extract. 3)Had only 1/2c sour cream so used 1/2c yogurt. 4)Had dark cocoa. The texture is not dense, very fluffy & moist (not too muffin-y). Taste was pretty non-existant. I guess adding lots of extra chips DOES help some of the reviewers here mask the taste. And using dark cocoa didn't help. Topped each with ganache for more flavor. Again not too muffin-like.
