Pizza Dough I

I seriously do not understand how this recipe could have such high ratings. I just made it per instrctions and it was yucky. It was heavy and tasted like flour, never rose in cooking....and yes, my yeast was fresh. Bummer :(

Slow Cooker Chicken Taco Soup

Very tastey! I added a rinsed and drained can of black beans, an additional cup of water and a chicken bouillon. Also at the end, squeezed in the juice of half a lime. Delish!

Jamaican Beans and Rice Dish

Here's a fail proof version: 2c uncooked rice,1 can kidney beans, 2 garlic cloves minced, 3 sliced green onions,1 tsp thyme,1 can coconut milk, 2 cups water, and a whole scotch bonnet. Bring it all to a boil for about 20 min., remove the whole pepper. Season with additional salt and pepper to taste. You could add some curry powder if you like it as well.

Jo's Rosemary Bread

I thought this bread was just ok. I don't quite get all the hype. I baked it in the oven, even spritzed water in occasionally and the crust never browned as nicely as I had hoped. My bake time was longer than some others too. Flavorwise it was good, just not the bomb I had hoped for considering the ratings.

Microwave Bread and Butter Pickles

These were really easy and taste great,almost like the ones my mom used to make. I stored my in canning jars and simply turned the sealed jar upside down (immediately while the liquid is still really hot) and the lids sealed. I use this trick when making jam too. I would like the pickles a little crisper so next time I will try microwaving them only 5 minutes instead of 7.

Best Fried Green Tomatoes

These were really good...a little bit too salty for me but I loved the crunch. I only used about a 1/2 to 1 cup of oil though..not necessary to use a whole quart if you fry them in a skillet.

Fried Okra

This was really good! I also used half flour and the texture was great. We liked it almost as much as the fried okra at Sonny's BBQ..dipped in ranch dressing, YUM!

Chili I

I have been making this recipe for several years and my husband thinks it's the best! I like other reviewers halve the sugar, and also use 2 jalepenos...4 is way too hot for me. The heat and flavor increase by the second day. I always make it with the homesteader cornbread recipe also on this site! YUM! Perfect for a rainy day!

Roquefort Pear Salad

This was as delicious as it sounds...wonderful combination of flavors. I doubled the dressing ingredients (except the oil) as many reviwers suggested. I served it at a dinner party and everyone raved about it. I will most definitely make it again.

Lemon Poppy Seed Bundt Cake

Very good! I also used lemon pudding mix. I used the juice of one lemon then filled the measuring cup of juice to one cup with water. I didn't have time to soak the poppyseeds and I don't think it made a difference. Had to use an angel food cake pan too, since I don't have a bundt pan but it was fine. I made a glaze of powdered sugar, lemon extract, and milk for the topping... yummy!

Jamie's Cranberry Spinach Salad

Soooooo good! But I did also tweak a few things after I made it a couple times. I used balsamic instead of cider vinegar, and I cut out the sugar since balsamic is sweet. I also omitted the poppy seeds and I added fresh strawberries and some walnuts. I could eat the whole salad alone if I'm not careful! Thanks Jamie!

Spring Biscotti

This is a delicious biscotti, goes especially well with chai tea. I left out the nuts and added extra cranberries and chopped crystalized ginger instead, and I used a Lindt white chocolate with coconut bar. I also used fiori di sicilia extract (which is an orange/vanilla extract, think creamsicle..from the Baker's catalog). I couldn't stop eating them...sooo good!

Spicy Oatmeal Raisin Cookies

Dissapointing, not like a cookie at all, but tastes like the cake mix...even the texture is too cakey. I won't make these again, miss the butter flavor of a traditional oatmeal cookie.

Big Soft Ginger Cookies

Like everyone says, the flavor was great with these cookies...but I also found the dough to be too soft and only half of my cookies were edible, the others wouldn't cook through and some even spread all over. I consider myself a proficient baker so this was a dissapointment. If I gave them another shot, I would only use only 1/2 cup margarine, or add more flour.
